      It's not really creativity. It's just a basic understanding of what works with what, based on experience and understanding of flavours
      I must admit I do think pickled blackberries was a nice touch though

    The level of intrigued confusion when Ben put raw rice, coconut milk, and an undrained tin of beans on a tray is one of the things I'm here for! I love seeing things I would never have thought of (with the most minimal washing up for my lazy self).

      He's done this before with one or two recipes years ago which is on the channel I believe. I think he did a thai roast chicken with coconut milk tray bake and also a jerk chicken tray bake with coconut milk and rice.

    • @thenovicenovelist

      It brought back memories of an Uncle Roger episode where a lady tried to cook egg fried rice with uncooked rice. I was like 😮 when Ben put uncooked rice into the pan. Then, he explained it and I thought, "Okay, that might have enough liquid to work."

  • @AllyTheGreater
    @AllyTheGreater 2 ปีที่แล้ว +805

    I literally made Ben's rice dish as soon as I finished the video. Can confirm that it's awesome!!
    I'm so lazy so love any hack that means I can dump everything into one pan and just walk away whilst it cooks..
    In the spirit of the challenge, I used whatever I had that needed to be eaten - so I substituted chicken for the paneer, chickpeas for the beans and added sprouts and broccoli. The lime is ESSENTIAL though!
    Happy cooking everyone!

      @CordeliaRavenwood 2 ปีที่แล้ว +9

      Oh that would also be good if I make hummus. I find a full can of chickpeas is sort of too much hummus. Throw the other half in here

    • @C-VI
      @C-VI 2 ปีที่แล้ว +7

      I did this and replaced the paneer with homemade meatballs and the chickpeas with cauliflower, also worked really well. But i should have used some more liquid to get the rice perfect.

    • @gunschulke
      @gunschulke 2 ปีที่แล้ว +4

    Also, Ben, you knocked this out of the park on this one.

  • @mackan072
    @mackan072 2 ปีที่แล้ว +29

    The blackberries on the mash and meatballs looks very similar to the lingonberry jam typically eaten with meatballs in sweden.
    With blackberries tasting sweet, tangy, tart and sour - I believe that they'll actually be a fairly reasonable substitute for lingonberries. While it's a completely different thing, with a completely different taste, they fulfill the very same role, and to me, that is what a substitute should aim to do while cooking.

    • @IAOIceland1984
      @IAOIceland1984 2 ปีที่แล้ว +1

      yeah can confirm as an Icelander, we often subsitute the lingon berry jam for rhubarb jam though. We even have rhubarb jam with schnitzel

    Props to you guys for coming up with six yummy dishes! With all those ingredients (except the beef, I'm vegetarian) I would have made a great coconut milk pulao or pilaf with some paneer for the protein, and a Raita with the avocado, coriander and lime, chilli and sour cream. Pulao is easy, just throw things into the pot, season to taste and wait for it to cook. Simple, one pot wholesome meal, packed full of flavour and nutrition! Perfect mid week comfort food.

    I have simple tastes and a small appetite. I would have rice and butter beans with some of the tomatoes one night. Half the beef cooked with garlic and onion and then mix in cream of mushroom soup (a pantry staple for me). Serve that over mashed potatoes. Cook the paneer with frozen spinach(another staple) in coconut cream with curry powder.
    That lot would feed me for more than 3 nights,more than a week.

    2:40-ish: Watching Barry with the grater reminds me to mention: There's this thing someone's come up with for disabled cooks, a bit like a tongues, whereby you grip the cheese or whatever you're grating with it and it has a finger guard and grater surfaces on the sides as well so less waste. Any chance you fellas would test it some time? I would, but with grip and hand sense issues, I wouldn't necessarily know if I'm grating my hands.

    Rather than a new midweek meal every day, what I do, is right after my grocery day, I'll make a veggie broth with all the random veg I picked up like greens (cook-safe salad mixes, spinach, yu choy, napa cabbage, etc), my starches (plantains, parsnips squash, sweet potato, cassava, daikon, or long squash), mushrooms and onions. I'll just boil that until the starches are tender, I'll salt it but not taste it because on it's own it's not supposed to taste good, portion it into 9 portions (two 5 day work weeks worth). I call them supplemental packs because they're made to beef up my meals with flavour and nutrients, kind of work as a backbone for my dinners.
    Then, as I'm leaving for work I pull one of those out of the freezer. That way, I can get home fry off mustard and olive oil, spices, ginger, garlic, tomato paste, add the supplemental pack, half a cup of dry lentils, and make an improvised curry, and boil a cup of rice. This started because I got sick and tired of protein powder, but found that 1/2 cup of dried red lentils has the same macronutrients and I love curry.

    I dont think i could eat all that potato and parstnip mash, but if you were to scale the portion down, still make up the mash, but then make it into a variation of bubble and squeak for breakfast the next morning!

    I love this idea. Can you come to my local shop and use some of the ingredients they have that I don't know how to use. For instance what do I do with a bitter melon?

    With those ingredients I would have to try and recreate those dishes

    I tried to make Ben's paneer dish. I removed the onion (roomate is allergic) I only had brown rice-I had to bake it twice as long and took it out to keep from burning it. The rice was not finished
