An outstanding recipe, looks great and I am going to give it a go. My normal go to pans are cast iron but they aren't great with wet tomato based sauces. What size pan is that, 24 or 26cm? Looking to use your link to buy it so you get kick back from it. Also doesn’t look like it comes with a lid, did you buy yours separate?

That’s what I do The meat fat adds flavour and the smell is of beef or lamb etc so I don’t see the point of throwing it away and then adding more flavourless oil?
Wouldn't it be better to add the tomato puree while sauting the onions so it has a chance to cookout and enhance it's flavour? Rather than seperate spices i just use chilli con carne seasoning from amazon, Old India brand, Paprika, Chilli, Black Pepper, Cumin, Coriander, Salt, Garlic, Fenugreek, Oregano that is my base to which i add some ancho chilli powder which is poblano peppers that have been roasted and dried and Mexican oregano. Just use basic long grain rice no need for basmati etc, mind you i have notice asda/tesco/sainbury's do not even list basic cheap long grain rice on the website only the parboiled easy cook rubbish.

Nice recipe, instead of discarding the fat why not add it back and cook the rest in the fat? Would make it a whole lot tastier :)

Yes, coriander works really well in chilli. If you don’t want to use it, you can always add parsley instead
