Yep, Turkey was already on my list as I've wanted to visit the Roman ruins of Ephesus at Selçuk, but right now you've sold me on North Macedonia, the Matka Canyon looks spectacular. That said, Albania's always been on my radar as well - any country that banned beards on men (and I suppose women too haha) must be worth a visit, especially if the people are as friendly as you discovered :) Thing is, I live right on a beach (less than 70m from the water's edge), so I'm less interested in beaches...
When you visit Turkey you should definitely go to Cleopatras pool at Pamukkale to see the underwater ruins if interested in ruins!! I think you will love Albania especially the Northern part!
