Chicken Fingers With Peach Dipping Sauce
Dipping Sauce
1/2 (8-ounce) can sliced peaches
Juice of 1 lemon (about 1/4 cup)
3 tbs brown sugar
1 tbs butter melted
1 tbs cider vinegar
Salt and pepper
Chicken Fingers
4 boneless, skinless chicken breast halves
1/4 cup all-purpose flour
1 cup dry bread crumbs
1 tsp onion powder
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
1 large egg
1 tbs water
1/3 cup of oil
To make the dipping sauce, purée, the peaches, and their juice in a blender until smooth. Add the lemon juice, brown sugar, butter, and vinegar. Pulse the blender until all is well mixed, but not foamy. If the sauce is too thick, thin with a little water. Add salt and pepper to taste and set aside.
Trim the fat from the breast and remove the white tendons, running through the tenderloins. Place each breast between sheets of wax paper and gently pound with the meat mallet until it is of even thickness. Slice into strips about 1 inch wide. Dust the chicken with flour until well. Coated on all sides.
 Stir together, the breadcrumbs, onion powder, thyme, salt, and pepper in a shallow bowl.
In another shallow bowl, use a fork to beat the egg with the water.
Heat oil in a large skillet over medium- high heat until very hot, but not smoking.
Coat the chicken with flour, dip the chicken pieces in the egg mixture, then roll in the seasoned breadcrumbs until well coated, patting to make the crumbs adhere. Slip into the pan. Continue adding more pieces until the pan is full, but not crowded.
Fry until golden Brown, 2 to 3 minutes per side. Use tongs to remove the cooked pieces and drain well on paper towels. Repeat until all the chicken is cooked serve hot serving the dipping sauce on the side.

At first, the idea of peaches too me a second, but it grew on me.
My first thought was that maybe the peaches should be completely drained; and I also use cornstarch thickening a lot.
I understand about flavors; mustard and cumin are not good with me and I generally omit them.
I might omit the vinegar making this, but all in all, they sound really good. Thanks again for showing me now things!

Hi Michelle. Sorry I seem to be behind on so much these days. I love chicken fingers. Graham would really like the peach dipping sauce so would his Mom I would think. So would I for that matter lol. I like using olive oil also. Those chicken fingers looked good frying up in the pan. Wow 10:59 I need that plate and dip. Thank you both. When I visit my mother in law I am making this for her.
