    Beef noodle history lesson! Prior to the 1949 retreat of the Nationalist Party (Kuomintang/KMT) from the mainland to Taiwan following the Chinese Civil War, Taiwan was largely a rice and pork based cuisine. Rice was the regional staple crop of the Southern Chinese sphere of Southern Fujian, where the majority of pre-1949 Hokkien and Hakka migrants came from; and pork because of a tendency to avoid eating cows since they were valued as beasts of burden for farming.
    1949 brought over an influx of Chinese from all over mainland China to Taiwan. Beef noodle in particular came from the confluence of a couple cuisines. Beef consumption came from the Hui people (Chinese Muslims) of central China along the Silk Road due to their prohibition on pork consumption. The spicy bean paste known as doubanjiang comes from Sichuan in the southwest. Knife cut noodles that you find in certain varieties of the dish came from Shaanxi. The technique of red-braising meat (hong shao rou) is commonly associated with coastal China, particularly the lower Yangtze around Shanghai. The dish morphed into countless varieties during its stay in Taiwan as people experimented with now popular additions like tomato broth, Chinese herbs, and pickled cabbage (suan cai), and as such has really become its own thing.

    Jiufen is famous bcoz japanese used to mine gold there. Aside from the old streets, there's also a gold museum, golden waterfall and double-colored sea (not sure about how it's translated into English). All of them are just nearby and worth visiting.

    Did you try 大腸包小腸? It's like a hot dog but instead of a bread bun, it's a sticky rice sausage wrapped around the Taiwanese sausage and then complemented with different picked veggies. The rice and veggies help to balance out the saltiness and fat of the sausage and it's one of my favourite night market foods.

    Personally I don't think there is such a thing as a "signature dish" in Taiwan... because there are simply too many classics! But Beef noodle soup is definitely one of the classics👌

      Nice that you know the Taiwanese language! I do enjoy the foods you mentioned, but I have to say, Taiwanese food is a combination of a variety of cultures, that's why it's hard to pinpoint just a few items👍👍I actually like 鹹酥雞&香雞排 the best.

    There're many iconic dishes, and beef noodle is only one of them. One reason for making it iconic is because it was invented by Chinese immigrants who came to Taiwan in the 40s and 50s as war refugees, and the taste is a combination of Mainland Chinese style (said to be Sichuan style) and local Taiwanese style. Therefore it represents the unique history of this country. As for other classics, I would definitely recommend braised pork rice (lu rou fan), scallion pancake, and oyster vermicelli. As for sweets, Aiyu jelly in lemonade is a must try. You can't really find it anywhere else in the world.

    The funny thing is that Taiwanese people did not like to eat beef before. However, United States foreign aid after WW2 provide lots of beef to Taiwan and create the beef noodle culture in Taiwan today.

    I see you guys went to my fave Yong Kang Jie beef noodle towards the end. That is Szechuan style broth but not all 紅燒 are Szechuan style. Some are simply with soy sauce and other spices. And then there’s also the clear broth and tomato broth. Enjoy.

    Yongkang Beef Noodles has been around since my father was a child. We used to come here every sunday after church when I was a kid. They started as a street vender next to this restaurant and ended up buying the entire building. My only beef with this place is too many international travellers know about it now and my childhood memory is becoming a nightmare of long line ups any time of the day! They are also famous for their appetizers ranging from tofu noodles to egg plants, their staple rice coated steamed ribs or intestines are also highly recommended.

    Oh gosh THANKS IZ I've been missing Taiwan for so long. I'm heading back to my hometown come December and I can't wait to get back to all the yummy foods :3 imo the beef tendon is my favorite and the spicy broth is BOMB (we love adding tomatoes in too for some juicy acidity).     I lived in Taiwan for more than 20 years...The Beef Noodle soup was the best I ever had...ANYWHERE.. Absolutely delicious.. In fact, Taiwan long held the reputation of making the very best Chinese food...in the world. I have no reason to doubt that THAT reputation continues to this day !!

    that taiwanese sausage is more like กุนเชียง in thailand. we usually slice it 0.5-1cm thick and fry them on pan with low heat just to make the fat on skin little bit cooked. we eat them with boiled rice. with salty egg, sour vegetable . fresh cooked veggie, fried dry fish. i think that sausage is a common food for whole asian. might include those upper and far west of china too where preserved food is very common for cold weather

    I love seeing the kids eating all the different foods. Fantastic. Ethnic restaurants need to be more family friendly in my opinion. That's how you develop lifelong eaters. Love it.. loved Portagual too.. made me book a trip there. Could you please include prices.

    Wow, the soy milk place is just next to my flat. Btw, they renovated the whole building since last year and this soy milk place became a little more up scale in feel.

    2:39 there is something about Jiufen and rain lol, I am Taiwanese and every time I go to Jiufen it would most diffidently rain
