  • In this video I'm going to show u how to make Haitian rice easy and simple.
Here's the exact measurements of everything I used in this video:
    1/2 oil
    2tsp "Haitian Spice"
    1 cup of Beans
    1 Maggie
1 tsp or less of salt (this is because Maggie has salt in it)
2 1/2 Rice (Brown Basmati Rice)
    3 Cups of water

Hey Carmen. The water was brown because she used the water that was used to boil the beans. So, with regular water boiling with the beans, the water turns brown. Don't throw away the bean water after you boil the beans because you'll use that to put in the rice like she did. Love this video!

To help everyone, epise spices are added to a blender( every Haitian does it different), to name a few: garlic, onion plant diced, onions, green bell peppers, parsley, pepper, lemon juice(the one sold to marinate), Maggie(optional). Blend it all up n it may come out green, or red depending on your bell peppers. you can bottle up the remainder for nxt time. CAUTION: keep away from your eyes and hands. these spices are delicious but strong. ;-)

This is my second time using your cooking method to cook rice and beans and it came out fabulous!. My mom actually sat down and ate a bowl of rice by itself and we are not rice people in our house. Through prayer and by using your method and watching a one other rice and beans video I actually understood the ratio water to rice method.... cause my rice was usually literally a hot mess. Now every grain is flavourful and not mushy . Thank you again and appreciate this video soooo much.

It depends on how many cups of rice your making,
2 cups of rice you need 3 cups of water
A tip: If you see the rice comes little above the water then that's the right amount of water
If the rice is below the water you have to much water

You should soak dried beans overnight before you boil them. The rice will taste better but I have used canned beans in a pinch for time. Just make sure not to boil the cooked beans too long or they will be mushy when you cook them with the rice. You can also do a quick boil method where you bring the dried beans to a fast boil, then turn the heat off and let the beans stand in the hot water for an hour before using them.

Ayinofu Chinny Amala it's very easy, you need these basic ingredients, how much you put is up to your taste... you need garlic, green onions (not the dark green part) salt, Maggi, accent, mash into a paste or blend with a bit if oil...for meat same ingredients above with scotch bonnet pepper, some MOJO, this is pretty much your base to add anything else you want. ..hope this helps

If you are a press for time, go to your local Hispanic Market and buy what they call Sofrito. Its good but may be missing the vinegar and or citron that most Hatian people add. Me personally, I use:
      2-3 Garlic
      1 Yellow Onion
      1 Green Bell Pepper
      2-3 Green Onions
      1-2 teaspoons Black Pepper
      2-3 Tbsp Vinegar
1 Bonnet Pepper or Red Chilli Powder
2-3 tsp Pink Salt (Substitute for Maggie)
I hope this helps. You can add your own flavors but this is what I use as my epice.

That's NOT true, Jamaican rice, TRADITIONAL recipe, is firm, like Jamaican Chinese style (the texture of stir fry, firm). Some people deviate from Al dente because of personal preference.
Authentic Jamaican 'rice & peas' (really rice & kidney beans) is beans soaked in water 6 hrs., this water is discarded (It causes flatulence). The beans are rinsed and cooked with (defatted & rinsed), salted beef (no salt is added until it's tasted and MAY require salt). Pressed garlic cloves, pounded ginger root, onion powder, diced scallion & thyme are added to the stock with a whole scotch bonnet pepper (pierced).
Coconut cream is added to the stock. Taste it, for flavor and salt, usually the salted beef gives enough salt. Add rice, whole rice (black, brown or red) are more nutritious. Stir the stock, (there should be an inch of stock above the rice), add water if necessary. Simmer this on low heat covered, til the rice is Al dente. Remove the rice from the flame, stir (with a fork), it should be firm and dry, like Jamaican Chinese stir fry (not like Italian risotto).
No other recipe compares to this AUTHENTIC one, handed down from the elders. Everything is fresh, NO canned beans.
