SECRET REVEALED! RICE COOKER RECIPE-Century Egg & Pork Congee 电饭锅皮蛋瘦肉粥

  • This recipe is supposedly close to Hong Kong style congee which has a thick and sticky texture to the porridge. While some might find century eggs unbearable to eat or even smell, many of us Chinese love love love century eggs. We can eat them on its own with some pickled ginger. If you are not a fan of century eggs, you can always replace the non-congee based ingredients with other ingredients such as seafood, chicken or fish. The basics of making the congee remains the same.

    Ingredients
    Serves 6 pax
    Congee ingredients:
    3/4 cup of jasmine rice
    1/4 cup of glutinous rice
    10 cups of water
    Other ingredients:
    4 whole century eggs - diced
    400g lean pork (can replace with chicken)
    Marinate for lean pork:
    2 tablespoons of glutinous rice flour
    2 capful of rice wine (to remove the porky smell of the pork)
    1 teaspoon of sesame oil
    2 teaspoons of light soy sauce

    I once tasted a Vegetarian Loh Mai Kai n I find the aroma so fragrant....I tried a few vege seasoning but couldn't get the taste....wondering if u could help me find out what spices or seasonings they use n better still if u could video demo the recipes too. Tqvm n warmest culinary regards.

    Just wondering, what would be the different outcomes of adding the century egg earlier in the rice cooker vs. after the congee is made? Does it change the flavour?

    May I know if soak d glutinous rice in advance? Rice cooker cook 2 hours?? Set porridge?? Water you put what quantity? Tqvm.

    So glutinous rice floor is the secret to making smooth Hong Kong style congee. I must give this a try but hope it won't turn out thick and clumpy. I plan to use chicken instead of pork. Even when I buy freah pork, never know my dish will be hit with the strong unpleasant smell and taste.

      I’m using Zojirushi rice cooker to cook this recipe. I select ‘Congee’ mode and the congee will cook in 70 minutes’ time. It tastes really good. 😊

    hi if I use minced pork, do i make pork balls or simply scatter it into the rice cooker after the 1 hour mark? thanks!

      Good morning It depends on whether you want them in balls or just scattered around. If you want them scattered, add a small amount at a time then stir to break them up. If you want them to be balls, roll them into balls first then add them. Don’t stir them until about 5-8 mins later so they can maintain the shape as they are cooked.

    I remove the soil part of century eggs just by hitting the egg on surface a few times! the hardened soil will crack off :p

    Glutinous rice flour to the pork? What is the difference by putting glutinous rice flour to the pork instead of corn flour? Tks

      +Margaret Wong Hihi. Although glutinous rice flour and corn flour both act as thickening agent for soups or gravy, corn flour will make the porridge watery if you continue to boil after adding it to the porridge. Comparatively, glutinous rice flour is more stable at high temperature ie it will not make your porridge watery. However, since we are not adding alot of flour to the pork, you can replace glutinous rice flour with corn flour if you really do not have.
