    I tried this recipe last night and it was EXCELLENT!! Super easy to make, but you have to pay attention to the steps. Great for a beginner! I used rice wine vinegar for the cooking wine and replaced the soy with unsweetened oat milk (since we use that more than soy milk) and this was excellent! My husband said to put it on the regular rotation! My daughter said it needed a bit more soy sauce to the milk broth, but with a little tweaking it was perfect! Great way to try out some new ingredients I don't regularly use. Thank you for sharing this with us! Will share this video to my Facebook page.

    that egg looks lovely! however, I tried making it and found that it may need more specific instructions. I first put 2 eggs on a pot, salt and vinegar as instructed, filled 80% water, covered and put it on "low" flame for 5 mins. Then raised the heat to "medium" flame. After 4 mins, water hadn't boiled yet. So I decided to leave it and set the timer for another 4 mins. After that, still hadn't boiled, did another 4 mins. Finally I saw the water boiling and once the timer rang, pulled it out into the ice water. But that egg was still to soft, sorta like onsen-tamago. Will keep experimenting with my equipment to see how I can achieve a good result :)

    - chilli oil
    - soy milk

    This dish is originally from Sichuan, China. "Dandan" is like a long pole that people used to carry things on their or shoulders. Originally, street vendors would walk around with 2 buckets, one each end of the pole. One bucket would have the noodles and the other the meat and sauce. In China, this dish uses Sichuan peppercorns to provide a numbing mouth sensation (it is very different to black or white pepper corns). Pickles are often added.
    I like this innovation in using the soft-boiled egg and also the soy-bean milk. I will try that next time!

      It's roughly 3 or 4 days if you keep heat the broth 1-2 times a day.

    I want to make this!!! By the way, I hv a couple of questions:
    1. Can you substitute cooking wine with something else?
    2. Does it have to be sugar free soy milk?
    3. And does the sesame paste have to be tahini sauce or just any sesame sauce in general?

    • @carissatzeng8217
      @carissatzeng8217 3 ปีที่แล้ว +9

      1. Cooking wine could be omitted, though your meat may taste more gamey and less aromatic. However it won’t be too noticeable. You could play around and sub with other alcohols like vodka and gin, but be careful to not add too much.
      2. Yes it has to be sugar free soy milk, unless if you don’t mind your broth tasting sweet
      3. It can be any sesame sauce, HOWEVER read the ingredients on the sauce you want to use to make sure it’s suitable. As long as the flavours won’t clash, you’re good to go. One good way to experiment would be to mix a little bit of the broth, soy sauce, and chilli oil with the sesame sauce you want to use and taste just to see if you like it

    • @syri8766
      @syri8766 3 ปีที่แล้ว +1

      1. You could use saké or mirin.

      3. You could even use peanut butter if you can't get tahini.

    Thanks, nice vid, you created a restaurant style soup. I have been making a veggy type of ramen. Basically some shredded veggies , say a tablespoon each, sometimes with peas and or corn , or shredded fresh or frozen shredded carrots. Premade beans ground or whole are good for some protein. A dash of soysauce sometimes. A teaspoon of peanut butter is really a nice treat...and its just a small amount , and you dont taste it as a peanuts peanut butter ssndwich, but just be sure it gets mashed in and-or dissolved before esting it. Add in any spices that you like... garlic powder, onion powder, dash of vinegar, hot pepper, etc......Variety helps.

    Super tasty, I love the flavorful broth. I can never get my soft-boiled eggs just right and this is no exception but I think that's more of a problem with me than with the recipe. 10/10, would make again.

      can you get them right after a year? its really easy, put some water on, WAIT until it boils, and only then put the eggs in, wait EXACTLY 7 (or 6) minutes and take them out and put into cold water (i dont use ice cold water and they still come out good). i say that because a lot of people put eggs into water thats not boiling yet, and i feel like its harder to get it right then.

      This will depend entirely on the brand of chilli oil you use. You can always add more chilli powder/flakes to increase spicy-ness, or if you’re afraid if spice, either use a brand with less spice in it or just use regular cooking oil
