- Today I will introduce you to a quick and healthy recipe from the northern regions of Pakistan. This is a very popular and favorite snack item in Northern parts of Pakistan.
This pyaaz roti is perfect for brunchtime or as a late afternoon snack.
On cold rainy days, we used to ask Mom to make pyaaz roti for us. My vegetarian friends will also love it. It can be served with any of your favorite dressing, pickle, chutney, or sauce.
MEK Pyaaz Roti
3 cups white tortilla flour- Jowar atta
3 tbsp olive oil
2 tsp ground cumin seeds
½ tsp anardana- dried pomegranate seeds
1 tsp ajwain seeds- roughly crushed
½ - 1 tsp red chili flakes, adjust to your taste
1 tsp kasoori methi- dry fenugreek leaves
¼ tsp black pepper powder
1 tsp salt
2 tomatoes- chopped
1 bunch scallions- chopped
Handful of fresh cilantro- chopped
Handful fresh mint- chopped
1 tbsp lemon juice and a bit of the zest
1 ¾ cup water - or as required
Coconut oil for frying the roti
For the tomato Chutney
2 tomatoes- finely chopped
1 Jalapeno- chopped
1 garlic clove- paste
¼ cup marinara sauce or salsa
1 tbsp red wine vinegar or white vinegar
Salt and pepper to taste
Fresh cilantro and mint
1 tsp lemon juice
Add all the spices and oil to the tortilla flour. Add all the chopped greens and veggies to it. Start adding water slowly and knead to a smooth and soft dough. If the dough becomes soft then use a bit of extra dry flour to adjust it.
Divide the dough into four to five parts. Use a sprinkle of tortilla flour and shape the dough into flat disks. Then start spreading them gently with your hands. Keep a dust of dry flour underneath to keep the roti moving. That way it will be easy to shape.
Heat the pan and transfer the roti to the dry hot pan. Add a tbsp of your favorite oil or butter alongside the edge of the roti. Swirl and spin it for the fat to get around all corners. Also, add a tbsp of the fat on top of the roti. Flip it once the bottom is nicely golden. Cook on the second side on medium-high heat.
Cook all your rotis as shown in the video. You can rub some butter or brush olive oil on top after they are done cooking. Serve with your favorite dip or chutney.
To make the chutney:
First, finely chop all the herbs, tomatoes, and jalapeno for the chutney. Then transfer to the food processor bowl along with the rest of the ingredients. Now pulse only twice. Don't over process otherwise, the chutney will become foamy which is not appetizing. Pour in the serving bowl and enjoy! - บันเทิง
