    Each time my friend came home on leave from Thailand we would go to a Chinese restaurant behind Soho Fire Station in London UK. Every time we would start with hot and sour soup but they provided a small bowl of thick chilli paste that you could add for extra heat. He followed his with mixed meat (Mixed fish me) on Fried noodles. All washed down with 2 or 3 Chinese beers. He lives in Thailand permanently since he retired and I live miles away from London, so more terrific lunches there. Happy days.

    *Hot and Sour soup, the white version.
    Gotta add the vinegar last, or the intensity gets cooked off, same goes for the pepper, that's why you had to add more vinegar and pepper at the end. And no egg, or white pepper? Pretty sure traditionally, it should be soft tofu, and the shittake mushroom should be the dried kind that needs to be soaked, as they have more flavour.

    I made this soup this evening for dinner for my family 👌 had some leftover roast chicken and pork , I also used a bag of shredded coleslaw mix in my supermarket that had carrots and white cabbage for some extra crunch 👌 I also cooked some medium egg noodles to make it a bit more filling and topped them with the soup 👌 it was delicious and so simple ♥️

    I made this this week! It wasn't really my thing but still a big thumbs up because the texture and presentation were awesome. I also really loved the more chunky style compared to most soups I make.

    This is outstanding! I did use the Chinese black vinegar, added some white vinegar at the end. Couldn't find enoki mushrooms but it didn't matter. I love this soup!

    One or two chillies wouldn't hurt and bit of sesame oil.

    Looks delicious.the only thing I do differently is I use white pepper and I add about 5 or 6 Thai chilies. I grew a lot in the backyard. Also I like really spicy, I buy my my the bamboo with chili oil canned with them. Not really hot just adds more flavor. I live close to an Asian market

    This is an impressive soup, but for me, it lacks a swirl of egg drop and most of all, a final drizzle of sesame oil.

      No you're thinking of egg drop soup. Not the same. Sesame oil for what? It's primarily used on food after it cools down. Usually for meat or non spicy sauces.

    Every hot and sour soup I have had in the US hasunopened day lily flower buds in itwhich adds to the hotness and spiciness. you could even garnich with nasturtium flowers or violet flowers or pansy flowe®s.

    Hi! I don't like tofu, so I replace it with Kelp, we use red chillies instead black pepper, and a touch of Miso with the chicken broth... very delish!

    Looked at the recipe. First off, try throwing in a couple of whole dried chilies [ the type that are used to make Kung Pao chicken] as they give a nice edge to the soup, and remember that these chilies are NOT giving the soup its hot character.
    Why are we using black pepper? Shouldn't we be using white pepper. These two peppers are not interchangeable as the white pepper gives the heat.
    Caught your comment about black vinegar and yes, here in the states it is not a common item. And for those that have never used it, black vinegar has more rounded taste than white vinegar. We might substitute balsamic vinegar for the black vinegar as it also has a similiar taste. While white vinegar has a pucker factor so I use a combination of both when making this soup. Lastly, I prefer to add the white vinegar and pepper at the end to adjust the taste to fit my mood.
    And this is an excellent channel. Many thanks for the recipes and ideas.

    You MUST use WHITE pepper, not black pepper, and while you can get away without using wood ear (black fungus) shrooms you forgot the egg stream - a critical textural component...and you need sesame oil.
    Other than that not bad for a quick and tasty ten minute meal!

    I love hot & sour soup too. Unless I missed something it looked like she added only black pepper for heat. I’m surprised to see that.

      Try adding some sriracha and a drop of sesame oil. Even when I order my hot and sour from takeout chinese, I add those. Mmmm.

      This is the worst hot and sour soup recipe i have seen. Give a try to the one from Souped Up Recipes channel. (Also anybody, who know how to boil water, knows that this is not 10 min at all...)

      @@hrehi so harsh! have you tried it? it tasted better than many H&S soups I've had at restaurants (I used black vinegar though).
      it's not that spicy but it doesn't feel like it's missing heat. it's about as spicy as a normal h&s soup and you can always adjust as needed. but to me I was very surprised at how closely I was able to mimic the restaurant version by following this recipe

      Looks really good. I learned my take from a friend who found it in a very elaborate Chinese cook book where the stock would send me to the poorhouse and all the meat would be thrown away. Anyway #1 white pepper #2 some sort of additional heat (I cheap out and use some chilli flakes) #3 rice win vinegar (use what you have and I don’t always have but make this soup very often) #4 a few drops of sesame oil in the bowl being served adds additional aroma and you notice the mild coating on the mouth, hard to explain) #5 her version looks amazing as is and I’m super stoked that she used some chicken. Most vids on hot and sour soup are meatless (some exceptions when it comes to the broth).

    Guys just add some chili oil and paprika powder and like 2 tbs of sesame oil (rly gives a nice smell) and also siracha sauce and moah. It tastes wayyy better

    omg! this recipe worked like magic :D the ingredients seemed very simple but once I added in the vinegar, it just transformed immediately into hot and sour soup! So cool :D
    it tastes just like the restaurant version! this is I think the third recipe I made from you Marion, and I'm always amazed at how a) they're usually super simple b) ingredients are easy enough to get and c) the recipe ends up tasting like how you would expect the version you made in the vid! I hate when I try to recreate a recipe from a video and it just looks/tastes so much worse. never get that with your recipes.
    I will definitely be getting that cook book!

    Hot and Sour Soup
    Person of Serving: 4
    Time:
    Ingredients:
    1 carrot
    200g (7oz) or 1 pack Enoki mushroom
    200g (7oz) or 5 Shitake muchrooms
    100g (3.5oz) or 1 firm tofu
    100g (3.5oz) bamboo shoot strips
    1 cup (about 150g/5oz) Cooked shredded chicken breast (left-over BBQ/rotisserie chicken is perfect)
    6 cups Liquid Chicken Stock
    1/2 cup light soy sauce
    2 TEASPOON dark soy sauce
    1/2 cup black/white vinegar
    1 TEASPOON black pepper powder
    3 TABLESPOON cornstarch (mixed with 3 TABLESPOON water)
    some salt
    Steps:
    1) Shred 1 carrot into thin slices and put into pot.
    2) Pluck 200g (7oz) or 1 pack Enoki mushroom into smaller portion and put into pot.
    3) Slice 200g (7oz) or 5 Shitake mushroom in smaller slices and put into pot.
    4) Slice 100g (3.5oz) or 1 tofu horizontally into half and slice into smaller slice pieces. Put into pot.
    5) Add 100g (3.5oz) bamboo shoot strips,
    1 cup (about 150g/5oz) cooked shredded chicken breast,
    and 6 cups liquid chicken stock (enough to cover materials) into pot.
    6) Mix well, cover lid and turn on heat to boil it.
    7) [Seasoning] While waiting to boil, add 1/4 cup light soy sauce,
    2 TEASPOON dark soy sauce,
    1/4 cup black/white vinegar,
    1 TEASPOON back pepper powder.
    Mix well, cover lid and let it boil.
    (in another bowl, prepare 3 TABLESPOON cornstarch added with 3 TABLESPOON water mixed well).
    After boiled, add prepared cornstarch liquid into soup and mix well.
    Add taste if not enough (some salt, vinegar for sour, black pepper powder for spicy.).
    Serve.

      Egg - definitely needs it .... and the tufu. May I suggest taking the time to experimenting with other vegetables when making this soup.

    Marion - you know how bamboo shoots sometimes have they poopey taste? How do you avoid that? Because I love bamboos not always scared I’m going to get the ones that leave that bad after taste

      boil the bamboo shoots in water for about 3-5 minutes, smell and taste will be removed.

    This is my second search for Hot & Sour Soup both recipes were thin and had no hot Szechuan chili oil. These must be traditional cuisine vs cheap Americanized Take out Chinese cooking.

      NO! Why would you even suggest that? Over here, there is a fine if you are caught making this without mushrooms. I hope your comment was just a joke, as the penalties can be excessive for this offense.

    This is wrong doing. Vinegar must put AFTER cease heating or right before serving. Carrot and mushroom need to cook far longer than tofu. Tofu should put in AFTER boiled and turn to low heat. Use dry chili instead of black pepper, also add drops of chilli oil to increase favour. When adding corn starch, the soup should be stirring gentally.

    The pot is waaayyyy too big for that little soup :-) A few remarks here: Chinese people turning in their graves.... It's always white pepper and you add that together with the vinegar at the very end before you take if off the heat because both vinegar and pepper lose a lot of aroma when cooked too long. Enoki have no business in a hot and sour soup, but of course you didn't say "traditional", so that's ok. The tofu used is always the soft variety, not the firm one and of course nobody would use roast chicken for this.
    There are a couple of chinese cooking channels on here which do traditional hot & sour soup and I have to say: get the right ingredients and make a traditional one - it's so much better and takes only like 5 minutes longer.

      @@teachercarli Of course her version is allowed. She can do whatever she wants in her kitchen. It's just not a hot and sour soup you would expect it to be. If you look for hot and sour soup you expect a certain flavor profile at least similar to what you would get in any chinese place anywhere around the world. The general flavor profile stems from a few ingredients common in all the variations. If you make a significantly different version of something pretty traditional and put it on youtube, you invite people to comment on it and that's what I did because I wouldn't call it a hot and sour soup or if I did I'd label it differently like "leftover hot and sour soup" or something like that so people know it's not intended to be something with a more traditional flavor. Of course she never said it's a traditional version, but that's what you imply when you read hot and sour soup.

      Yes, you can replace it with light soy sauce. Dark soy sauce is for more for getting the color.

      Add a bit of sugar (1/4 tsp), sesame oil (1 tsp), and white pepper (to your liking). Mine was a bit too vinegary too, but adding the above made it taste better 😊 also drizzling in a large egg too if you want it
