  • Hot and sour soup 酸辣湯 is a traditional northern Chinese favorite packed with the acidity of Zhenjiang vinegar, the spiciness of the white pepper and the nuttiness of sesame oil.

    The flavor becomes even more complex with the inclusion of bamboo shoot, dry mushrooms, wood ear fungus and finishes with a beaten egg pour high above the soup to form multiple small egg ribbons floating on the thick soup.
    You only need twenty minutes to prepare it. Make it at home to warm your family (and their hearts) with this utterly delicious soup with the iconic flavors of Northern Chinese cuisine.
    This recipe is very close to the original hot and sour soup in Northern China, although I have left out ingredients such as ‘black tofu’ (see section 2 below) which is too exotic for most people.
    I can assure you that it is way better than many substandard hot and sour soup that is merely a tasteless, gloopy mess of cornstarch paste.

    Ingredients:
    Ingredient (A)
    100 g pork loin
    1 teaspoon light soy sauce
    1/2 teaspoon vegetable oil
    1/4 teaspoon corn starch
    Ingredients (B)
    1 tablespoon bamboo shoot 竹笋
    2 Chinese dried mushrooms, , medium size (or 1 large size) 香菇
    1 piece wood ear fungus, , about 10 of dry weight 木耳
    30 g carrots, cut into fine julienne
    3 slices ginger
    150 grams tofu, , medium firm
    1 egg, , beaten
    600 ml water, , or use chicken stock
    Ingredients (C)
    1 teaspoon dark soy sauce
    1 1/2 tablespoon chili bean sauce 豆瓣酱
    2 teaspoons salt
    1/2 teaspoon sugar
    Ingredients (D)
    2 1/2 tablespoons corn starch
    1 tablespoon water
    Ingredients(E)
    Coriander leaves, for garnish
    1 1/2 tablespoon Chinese vinegar 镇江醋
    1/2 teaspoon ground white pepper
    1 teaspoon sesame oil 麻油
    Instructions:
    Cut the pork loin into fine julienne. Marinate with the light soy sauce, vegetable oil and cornstarch for 15 minutes.
    Soak the dry mushrooms and wood ear fungus until they are soft and fully hydrated. Cut them into fine julienne.
    Cut three slices of ginger and set aside.
    Cut the carrots into julienne.
    Cut the tofu into strips.
    Bring the water to a boil. Cook the meat for half a minute. Then add the remaining ingredients in (B)into the pot and boil for two minutes.
    Add ingredients (C)
    Thicken the soup with the cornstarch slurry.
    Remove from heat. Add ingredients in (E). Mix well and serve.

    I've been watching for hot & sour soup recipes at least more than an hour. Out of them all, yours look delicious and most importantly easy to follow the instructions. I hope you take a good care of yourself from this corona pandemic 😷

    OMG!! I have been buying hot and sour soup consistantly from a chinese restaurant close to me, and I asked them about making it myself. They said it is really hard, and lots of stirring...so I got discouraged. This is the first video ive seen on this and I'm SOooo excited!!! I know they probably just wanted my business, but I'm SOoo happy I can make this myself!! Honestly, this looks better than the stuff I usually buy, and in the thick of winter I buy it about a gallon at a time, so it can get kind of spendy....Whooo Hoooo!!!!!

    I don't understand why most restaurants couldn't make a decent bow of hot and sour soup, even the high end ones. Yes we're in San Francisco Bay Area, not somewhere out places like Gillette Wyoming although they make some of the best steaks I've had. In any case, we found this hole in the wall cheap eat sit down place with a complementary hot and sour to start the meal. Wow! What great soup, no water down or cheap out on the ingredients either! We order hot and sour to go for later after we had out meals there. BTW, cool video, now wife could try making it at home.

      I totally agree. When I'm feeling under the weather my wife buys me a quart of hot and sour soup. By the end of the day I'm feeling 100% better. Now that I found this video I'm going to start making my own, once the local Asian store opens back up.

    I tried this recipe and I LOVED it!! Thank you so much for sharing it! I mistakenly used fatty pork which I should've marinated longer, but the addition of the final ingredients at the end were perfect. I really like that he mentions to end it at the end, because the black vinegar and white pepper are critical to the success of the soup.

    It came out good. I added some white vinegar along with the black vinegar. The hot bean paste amount was a bit spicy. You explain everything clearly. Thanks for the written recipe.

    I use to live in Houston Texas. There's a large Vietnamese community there . The Chinese restaurants make HOT AND SOUR SOUP but their's has lemon grass and shrimp. And a few Julien sliced carrots. I like it extra hot and extra sour . It's still one of favorite dishes. In cold weather it opens up your sinuses.

    Really amazing soup and recipe! Looked at other recipes for Hot and Sour soup but yours is the most authentic. I dumped in extra chicken, mushroom, and black fungus added a drop more spices (not heat) and some extra stock. Couldn’t stop telling myself how Delicious this soup is!! Also helps to have Chinese spoon to get all that goodness in every mouthful!

    Hot and sour soup and Tom yum gong soup is my absolute favorite soups, and I can eat them everyday. I have tried many recipes before and this was the absolute best.
    It’s perfect with chicken or pork with some leftover vegetables, just take what you have in the fridge. The most important is to use black vinegar, sesame oil and egg, don’t use other kind of vinegar or oil!

    'Taste of Asian Food'- I got excited when I stumbled across this video!! We have about six Chinese restaurants in my small home town, and the one that is my go-to for takeout, well, certainly has room for improvement. The addition of their mushrooms (which are obviously canned, not fresh) makes it have an earthy taste. Plus, honestly, the meat they identify as chicken in no way resembles real chicken; taste-wise, looks, and texture. So I always dispose of it to be on the safe side. I cannot wait to buy all these ingredients and turn them into what looks like real, authentic Hot and Sour soup! Thank you so much for your contribution of this most delicious Chinese soup!😀

    Thank you for your recipe for HOT AND SOUR soup. Only having had this in restaurants and take out, this soup can be made quite spicy! Medium spicy is what I have to ask for and that's still a bit hot, but those spices will kick a cold right out of you. I was first introduced to Hot and Sour Soup in NYCs' Chinatown and it became my panacea, replacing the age old Chicken Soup - although don't put that down. I even tried the "instant" Hot and Sour Soup, just add water and egg. I was a bit skeptical but even the instant was good.
    Though I'd love to make this, you have me wanting to call and order a quart of this fantastic soup. That's a good thing. Thanking you for your recipe and great video presentations!

    Wow! This is good. I bumped the pork quantity to 128grams and increased the other ingredients accordingly. The cilantro is a nice touch. Holding the white pepper, sesame oil, vinegar solution to the end is essential to getting the flavor proportions right. I substituted green chili paste for the chili bean paste. It’s what I had on hand. I also used half the salt. Cooking technique kept the pork from becoming tough.

    Nice recipe! I use lily buds and zha cai in mine instead of bamboo shoots, but otherwise almost exactly the same. I don't usually add carrot, but you convinced me to try it next time!

      The trick is to pour slowly, over low heat. Stir slowly to get bigger, and quickly to get smaller ribbons.
