    A good friend put me onto Kefir some months ago due to a serious digestion issue, i was worn out with trying laxative medications so i gave it a try thinking it won't work. I'm so glad i tried it & upped my daily dose to get the correct benefits from it as i feel so much better with no issues that i had for some years & no more being a patient in the ICU at the hospital having nasty treatments. I'm now starting to do my own Kefir at home rather than buying it at the supermarket, if you have stomach issues & have not tried this i suggest you do daily as it may well surprise you also.

    I just started making milk kefir, and am amazed by how similar the taste is to that of buttermilk! I love buttermilk, and was so disheartened when I couldn't find it organic. Now I can make my own!!! As always, thank you for another in-depth analysis of such critical information.

    It will make it thick and fully keifered in 12 hours if you have enough grains. You go to a lot of extra work. With nearly 20 years experience I have come to believe the most beneficial use is plain kefir first thing in the morning and last thing at night (8 oz is enough). We make it everyday with fruit and vegetables also but the most benefit, I'm convinced, is straight, no sweetener.

      @kathy williams In my opinion and from what I read the ratio is 1 cup of kefir per 1 Tbls of grains. One day fermentation dependent on the warmth of the home. The warmer it is, the faster it ferments. Conversely, if you place it in the fridge it will ferment very slowly.

    Awesome info! Thanks! Am I understanding correctly that the grains can be covered with coconut water or nut milk instead of whole milk? I detest milk & yogurt so I'm not too keen on trying this except that I feel I need to after a 2nd bout of antibiotic induced C-diff when trying to cure an ear infection. PLZ help me learn how to enhance the flavor without destroying the live grains. Thanks much!

    Works for me~~~>gallon and half raw milk~>mix in quart Pyrex one cup of last batch with 3 cups new batch raw milk and warm to 98 degrees only the Pyrex mix, now let sit to thicken, stir often, about 4 hours as the remaining milk warms in a large stainless bowl (COVER TO AVOID FLIES!). Add all together and stir for a while, 5-6 hours, and put into 8 quart mason jars and refrigerate just when it thickens with showing thickening curd, then shake again and throw in frig~~~~> Delicious soured yummy treat from the gods. Oh yeah I throw in some powdered commercial type, multi strain probiotics or a little homemade sauerkraut juice, just a little to add additional live, "wild" strains to my mix. ORGANIC RAW MILK IS THE KEY. For those doing coffee enemas, don't miss the opportunity to add a small amount of this mix of "bugs" to your enemas. It is the perfect way to replenish proper bugs directly into the colon without having to survive the digestive process and you can raise these babies on your kitchen sink by warming to 98 degrees in mason jars, distilled water and any mix of bugs and then some organic sugar and watch them grow, QUICKLY, with more water and sugar.

    Its better to get the live grains then the starter because with the starter you can only use it a few times before it loses potency.

    how long can you let the grains sit in milk at room temperature and the grains still be good? I mean, if left out for a few days and the milk spoils, will the kefir grains be okay? will the bad bacteria contaminate the good bacteria?
    And once the milk has Kefir Bacteria in it, how long can it last in the refrigerator? I assume the bacteria helps preserve the milk?

    Very informative video! So you use the milk grains to make milk kefir, but you can use non-dairy milk, but what are the milk grains made of? Do they have whey or something from milk in them to start with?

    I have severe Fibromyalgia and I makes smoothies only on my "good days", I then freeze them so all I have to do is pull them out and eat them like "natural popsicles" on the days when I am not functioning too well. Will this freezing process destroy the healthy bacteria? I was thinking of switching to kefir rather than using yogurt.

      i read you can store the unused grains double wrapped in the freezer so i guess it doesn't affect its live value! I don't know for sure but common sense made me think about the previous reference to freezing storage.

    Hi,
    I don't have grains but can always get kefir liquid bought from the shop and have the following question. How come when I pour some kefir liquid into a bottle of normal milk and leave it for 5-6 days it goes semi-solid after being creamy, but the shop kefir remains a creamy liquid indefinitely? The shop kefir is just milk and culture so it has nothing special (unless it's not listed).
    Is it normal for kefir liquid (not using grains) to go semi-solid after 5-6 days and lose its pourability? I can tip it diagonal without movement.

    I have a tibetan mushroom and make Kefir with it. I do drink it and mix with fruit; but I also add it to my bread dough. I'm wondering if I'm wasting it by adding to my bread dough. Is all the bacteria destroyed when baking in a loaf of bread? Thank you for such an interesting video.

      Wasted on bread as heat kills all the beneficial microorganisms. Just drink it neat or have a second ferment to make Kefir cheese & flavoured fizzy drinks with the whey :)

      No. Research has shown that although the micro-organisms might have been killed they are still useful in several different ways. So don't despair.

      Hi. I was just looking for some advice on kefir making. Are the kefir grains supposed to float to the top or stay at the bottom of the jar? The consistency of my kefir keeps coming out really watery. I don't remember the grains floating to the top when I used to make it a couple years ago, so, I'm thinking there's something wrong with my grains.

    My son used to make tons of kefir when he was two, he would make it and I would find it days later, it was like Easter egg hunting, there's always one nobody saw. Such a thoughtful boy.

    Am I the only one to have a bad experience with kefir? I tried it for 3 months and suffered severe constipation during that experiment. I had never had constipation before using Kefir and that was the only change in my diet. I drank more water, but that did not help. The only thing which did aid the constipation was stopping the Kefir and using more Goji Berries. Then when I began the Kefir again, same... constipated.
    I've known 2 others who have used Kefir, and they did not notice any health benefits whatsoever.
    So I'd say beware of the hype

      Adjane, did you get your Kefir Grains? I got mine from Dis-chem as a kit. I bought a Nutriseed kit which got me a jar, a plastic strainer and a really pathetic plastic spoon as well as a tiny amount (2.5gms) of grains - all for R250. Eight days ago. I'm up and running.

      If you go on Amazon people sell the live grain. You can join a fermentation or kefir sharing site on facebook where you only need to pay shipping cost because they are willing to share it with you for free. I am part of a Facebook group called, " Kefir grains Scobys and others to share."

    how many calories per ounce does water kefir have? I understand the sugar is consumed by the kefir grains and if not fermented too long alcohol won't form so would it be more or less calorie-free? I ask because some people think you need to drink a liter a day for some conditions.

      Typically it IS pronounced keh-feer www.merriam-webster.com/dictionary/kefir?pronunciation&lang=en_us&dir=k&file=kefir003 as in Arabic and German.
      In English, people might pronounce it kie-fer.
      I believe the right pronunciation for it is keh-feer as we have the word in Arabic as so, but that doesn't make other pronunciations wrong.

      Eh, doesn't matter really as long as your smart enough to know what he's talking about. If you don't then dang, but people can pronounce or mispronounce words however they please. Mostly it comes down to accent, so it's pointless to get all huffy about how someone says something seeing as how it harms no one.

      Maybe that’s why they sell probiotics in the health food store so you don’t have to have a smell that’s the only substitute I could imagine but it will cost you lots because they’re expensive yet if you take care of your kefir grains their last your lifetime

    You are mispronouncing it. It is pronounce “ke FEER”. First “e” as in “egg”, accent is on 2nd syllable.

    You mention it takes 2 ingredients, milk and the grain. Then in the next sentence you mention 1 Tbsp Grain to 1 Qrt "Water". I think that's a error. Water and milk grain will NOT make Kefir.

      There are TWO types of of grains(2 different species of bacterias). One feeding with lactose from milk(this would die in water) they are white like cauliflower, another species feeding with sugar you adding in water or coconut water(this would die in milk) clear colour.
