    Nachini Satva, also known as Ragi Satva or Finger Millet Pudding, is a popular dish in many Indian households. It is made from ragi flour (finger millet flour)
    Ragi is rich in calcium, protein, amino acids and is gluten-free. Hence can be consumed by 6-month-old babies and old people. Ragi is also the most sought-after source of calcium for lactose-intolerant people and those who don’t like drinking milk. This easy-to-make recipe makes yummy and healthy ragi pudding which is a delicious option for breakfast or as a mid-day snack.
    which can be refrigerated and stays good for another 3-4 days.
    INGREDIENTS:
    Ragi / Nachini / Red Finger Millet- 2 cups (350 gms)
    Water as required
    Salt to taste
    Green cardamon - 3 to 4
    Grated jaggery - 1 cup
    Ghee - 2 to 3 tsp
    Freshly grated coconut - 1 cup
    METHOD/PREPARATION
    Step 1:
    Ragi (cleaned & thoroughly washed 4 to 5 times) soaked overnight or at least 4 to 5 hours.
    Step 2:
    Next morning, grind soaked ragi, along with freshly grated coconut and green cardamon, add water as required, and extract juice, repeat same process again. Strain juice 2 to 3 times. Until it comes clean.
    Step 3:
    put extracted ragi juice on the gas, and keep stirring on a low flame. Be careful, should not form any lumps. once becomes a little thick add ghee, grated jaggery, and salt to taste. Keep stirring till becomes thick (add chopped dry fruits if you like). Put off the gas.
    Step 4:
    Grease the plate with ghee or a little oil, pure ragi pudding, and set it with the help of a spatula, tap the plate cover the plate, and allow it to cool down completely. (it will take around 2 to 3 hours to set the ragi pudding).
    Step 5:
    Once the pudding completely cools down, cut it into any shape of your choice.

      Yes u can set it without refrigerator, but if u want to store for 2 to 3 days then store in airtight container in refrigerator
