Excellent recipe. No hassle of extracting coconut milk. Tried it out. Appams came out with soft centres n crisp lace edges. I added 11/2 tbsp of fine rice flour to reduce gumminess . Not really necessary,it's just something i do with ground rice appams. On the whole,a keeper of a recipe.

Sometimes the batter is too thick and may need more water to dilute it. Also someone said that adding a touch of baking soda will make it softer. If you mix too much, you will be deflating the batter which will affect the texture. I never add baking soda
