- Croque Monsieur and Croque Madame are classic French sandwiches, often enjoyed as a quick yet satisfying meal in cafés and bistros across France.
A Croque Monsieur is a hot ham and cheese sandwich, topped with a creamy béchamel sauce and more cheese, then baked or grilled until golden and bubbly. The name "Croque Monsieur" roughly translates to "Mister Crunch."
A Croque Madame is essentially a Croque Monsieur with the addition of a fried egg on top. The egg resembles a lady’s hat, meaning "Madame."
The Croque Monsieur first appeared on Parisian café menus around 1910. Although its exact origin is somewhat unclear, it quickly became a staple in French cuisine due to its simplicity and delicious flavour.
The first known reference to the Croque Monsieur is in Marcel Proust's 1918 novel In Search of Lost Time. This mention helped cement its place in French culinary tradition.
Both Croque Monsieur and Croque Madame gained popularity due to their ease of preparation and satisfying nature. They became popular for a quick meal or a comforting snack, often enjoyed with a green salad or fries.
There are many regional and personal variations of these sandwiches. Some include adding ingredients like tomatoes, mustard, or different types of cheese.
These sandwiches are closely associated with French café culture. They epitomize the casual yet refined nature of French dining, offering a balance between simplicity and rich flavours.
Over time, Croque Monsieur and Croque Madame have transcended French borders, appearing on menus worldwide. They are celebrated for their straightforward preparation and comforting taste, making them a beloved dish in many countries.

Croque Monsieur
Ingredients:
- 4 slices of white bread
- 8 slices of ham
- 4 slices of Gruyère cheese (or Emmental cheese) any cheese that melts I had Charmidor
- 2 cups of grated Gruyère cheese
- 4 tablespoons of butter, softened
- 2 tablespoons of all-purpose/plain flour
- 1 1/2 cups of whole milk
- Dijon mustard - as much as you like
- Mayonaise - optional
- A pinch of nutmeg
- Salt and pepper to taste
Croque Madame
Fried egg
Béchamel sauce
2 tbsp butter
2 tbsp all-purpose flour / plain flour
Milk as much as you need to make a sauce
Pinch of nutmeg.
I used cheese in my sauce - to make it cheesy - add whatever you like. It becomes a Mornay sauce
oven to 400°F (200°C) - 10 mins
Air fryer 180°F (190°C) - 10 mins

With any cheese sauce, by adding a drop or 2 of Worcestershire sauce, you enhance the cheesiness and add a subtle piquantness to the flavor. As you added a layer of mustard to the sandwich, that further enhances the cheese flavor and to the ham. I add just a dab of high quality mustard to my cheese sauces. The difference in taste by adding these 2 ingredients make it a more refined cheesy taste. You'll never go back. Cheers!

I thought of the Worcestershire also. I'm not a mustard lover, but if I do use it, I use only Coleman's from the UK. It has a hot bite to it that will wake up your taste buds.

I'm wondering if that might help reduce the harmful nitrates and other cardiovascular harming compounds. Obviously it's going to cut down the sodium a lot.
Great to learn a new technique to deal with the curing juice that comes with some prepackaged deli meats. Saves on blotting with paper towels which in Canada are an expensive kitchen luxury.

I had to laugh because all I could think of was “where is the foie gras on top?” to really give our arteries one last send off before dying haha! I honestly would not care if i got to eat this masterpiece at least once… a year. I would say month or week but I know death would come to get me 😂😂😂

OMG, that reminds me of when my Dad was always trying to teach us kids to speak his native tongue. He held out his hat and said, " 'Chapeau', say it." We would oblige.
He would come home from work, hold his hat out and say, "What's this?"
I said, "It's a hat, Dad." and run the other way, hear him cuss in French in a funny way. I never heard an English cuss word from him.
Anyway, croque means crunch. I suppose like a proper, crunchy grilled sandwich, but crunch man just doesn't sound right 😳

Ok this is the best croque Monsieur Madame I have ever seen. I stopped eating deli meats because of sodium intolerance, BUT Iv been blanching everything including bacon to leech salt out. This was an excellent tip for the ham I didn’t think of it. I can’t help myself but I would add sliced big beef tomatoes, drizzled in olive oil, crushed garlic, and pepper over the top, with the tiniest touch of Sicilian oregano, to skip the egg on days, eggs would not agree with me. Wow.
There isn’t a thing you make I don’t hear a rumble in my tummy for.
The air fryer looks amazing. I love the 2 door concept.
I discovered you a while back with either traditional Irish dishes, or indian food videos. Anyway you make such a variety of food I am all in. The naan video was great. I can’t eat the store bought as they have so much salt. Iv made them before but never in bulk. Welsh rabbit is also on the list. Have you made turkish Pidé? lavash bread before? And Mexican birria? all things I want to try. I have to check if u have a samosas video. And onion baji. Its 7am and I am ready for lunch lol.

I wash all my smoked sausages or vienna or bokwurst or hot dogs with boiled water and then into pan with butter. So glad to see another person. It tastes so much better

When I watched this vid I surfed the net to see how other chefs made theirs, simply because your version looked a bit too much for me to eat in one go. Now that’s a ham & cheese toastie on steroids Rik 🤩! Always wanted to try a Croque Monsieur sandwich, & you’ve certainly inspired me to give it a go, might have to economise a bit on the fancy ham, by cooking up my own, but would certainly like to treat myself to some posh French cheese & Mozzarella to get the consistency & flavour as authentic as possible. @mrsmiggens6435 - I know that to buy vacum packed decent quality ham to make these would work out rather expensive, so I’m going to treat myself to a small gammon joint costing around a fiver & slicing a potion of it up, to make this sandwich (being slightly more rationing than Rik was) served up with some salad & or fries would make one main meal. With the stock & meat juices from cooking the ham, I can make a pot of soup, eg pea & ham or a hearty spring veg soup served up with buttered crusty bread gives me another couple of meals. I’ll also dice up some of the ham, cooked up with some mushrooms & a creamy cheese sauce mixed with some dried, cooked tagliatelle pasta gives another main meal & what’s left of the ham can be chopped up & added to a cheese, ham & tomato omelette, and if any left over a home made pizza topping - so pretty much should feed me for around 5 - 6 days for an outlay of around £5- £6. Hope this gives you some ideas for a work around to making the pennies go a bit further! 😊

@@mrsmiggins6435 You’re very welcome, where there’s a will there’s a way … I know things are tough right now but there’s always a work around. I do the same with chicken, buy a medium sized one for around a fiver, roast it up, enjoy a roast dinner, then use all the meat in a similar fashion, make a stir fry one night, curry another night, a pasta meal & boil up the carcass, skin & any fatty bits for a delicious stock for soup - such as chicken & rice broth or Chinese style chicken noodle or Chicken & Sweetcorn egg drop soup (Rik has a recipe for that in his back catalogue of recipes), again it can feed me for 5 - 6 days. Happy cooking & hope that helps give you some ideas. xx 😊👍

What a lovely sandwich to make for weekend lunch. Always buy fresh cut ham. Not encased in plastic wrapping as told water is added to ham to keep it moist in plastic.
