Every language has a rhythm, a musical quality, and if you don't master that even if you learn the words perfectly, the natives will have a hard time understanding you. I lived in Greece for four years, a long time ago and remember that i would sit in a public space and listen to the Greeks around me, not to understand their conversation but to capture the rhythm of the language. It takes a while and some effort but after some time you acquire fluency in the way you speak the language that becomes indistinguishable from the native speakers.

I had a native Greek teacher whom I asked to speak a little slower when speaking to me. She could do it only for a sentence, then she immediatly returned back to the "general" speed. 🙂Respect to those teachers on youtube, who attempt to slow down... 😊
I want to be able to speak, read, and write in Greek. Listening to native speakers does help because in time I can recognise words and using the context of the situation I can puzzle out what they are saying. Will take a bit more practise for me to understand what those outtakes were about though. 😂 ευχαριστώ!
This "δεν μ' ακούς" is a wife's thing. My wife keeps telling me the same in French ("tu m'écoute pas"), ever since we married. And she is not even Greek! It never crossed my mind to use this expression myself, as if everybody always listens to me.

Daniel, did you find you learnt much Greek from your wife or, when you are with each other do you mostly speak English with each other?
