    Recipe :
    Zero Oil Thali
    Preparation Time: 30 minutes
    Cooking Time: 1 hour
    Serves: 3-4
    Rajma Masala
    Ingredients:
    2 cups rajma (red kidney beans)
    1 large onion, finely chopped
    6-7 cloves garlic, chopped
    1” ginger, chopped
    1 bay leaf
    2” cinnamon stick
    3-4 cloves
    2 black cardamoms
    1 tsp kashmiri red chili powder
    1 tsp garam masala powder
    1 tsp coriander powder
    ½ tsp black pepper powder
    ¼ cup tomato puree
    Salt to taste
    Method:
    Soak the rajma overnight or for 6-8 hours.
    Remove soaking water, place rajma in pressure cooker, add 4 cups water, whole spices, finely chopped onions, ginger, garlic, salt to taste and cook for 5-6 pressures or till the rajma is well cooked and slightly mushy.
    Once well cooked, add the tomato puree, powdered spices and mix well. Allow to simmer for 15-18 minutes till the rajma is mushy and well cooked.
    Serve.
    Aloo Subzi
    Ingredients:
    5-6 medium potatoes, boiled
    1 tsp cumin seeds
    1 tbsp coriander seeds
    2 whole red chilies
    ½ tsp turmeric powder
    1 tsp red chili powder
    1 tsp coriander powder
    ½ tsp garam masala powder
    1 tsp finely chopped ginger
    1 tsp finely chopped green chilies
    2 tbsp chopped coriander leaves
    Salt to taste
    Method:
    Cut the boiled potatoes into 1” cubes.
    Dry roast the cumin seeds, coriander seeds, whole red chilies till fragrant and brown. Cool and grind into a coarse powder.
    Heat a non stick pan. Spread the potato cubes on the pan. allow to brown on one side for 3-4 minutes, flip and brown on the other side too.
    Mix together the powdered spices with ½ cup water and por over the potatoes. Mix well and cook till the water is evaporated and the spices are cooked. Add the powdered roasted spices, chopped ginger, green chilies and toss. Add chopped coriander and mix well. Serve.
    Paneer Makhani
    Ingredients:
    250g paneer
    1 medium onion
    4-5 large red tomatoes
    2tbsp cashew nuts
    2 tbsp melon seeds
    5-6 garlic cloves
    2” ginger
    2” cinnamon stick
    3-4 green cardamoms
    1 tsp black pepper corns
    2 tsp Kashmiri red chili powder
    1 tsp garam masala powder
    1 tsp black pepper corns
    2 tbsp cream
    ½ cup tomato puree
    ½ tsp sugar
    Salt to taste
    1 tsp kasuri methi
    Method:
    Roughly chop the onions, tomatoes, ginger, garlic.
    Place the chopped vegetables in a pan. add 2 cups water, cashew nuts, melon seeds, whole spices, 1 tsp kashmiri red chili powder, 1 tsp salt and bring to a boil. Cover and simmer till the tomatoes are well cooked and the cashews are soft.
    Cool and remove the whole spices. Grind to a smooth paste. Strain the paste to get a fine paste.
    Return paste to the pan. add I cup water, paneer cubes, red chili powder, garam masala powder, ½ tsp sugar and bring to boil. Reduce the heat and simmer for 4-5 minutes till the gravy thickens and the paneer absorbs the flavors. Add the kasuri methi, cream and mix well. Remove from heat and serve.
    Lehsuni Palak
    400g spinach
    1 tbsp chopped garlic
    3-4 green chilies, slit
    ½ tsp red chili flakes
    Salt to taste
    Method:
    Wash the spinach leaves well and remove the stems.
    Finely chop the spinach leaves.
    Heat a non stick pan. to a medium hot pan add the chopped garlic and reduce the heat. Dry roast the garlic on low heat till crisp. Add the slit green chilies and the spinach leaves. Allow the spinach leaves to wilt. Stir and cook till the moisture evaporates. Add the red chili flakes and little salt. Mix well. Serve.
    Raita
    Ingredients:
    2 cups yoghurt
    ½ cup chopped onion
    ½ cup chopped tomatoes
    2 green chilies, chopped
    Salt to taste
    ½ tsp red chili powder
    Method:
    Whisk the yoghurt well. Mix in all the ingredients. Mix well. Chill and swerve.

      Plant doesn't have cholesterol in it. So, therefore, plant sourced oil also doesn't have cholesterol in it. Secondly Vitamin A,D,E,K are fat soluble vitamins, so you need to add a little bit of oil or ghee for its absorption. That's why it is prescribed to take vit D supplements with milk for its adequate absorption. Anything in excess is not good. Ghee and all the woodpressed oils are healthy n nutritious, if used in adequate proportion.

      She used Teflon coated pan is cancerous. For the TH-cam only they cook these food, herself she will never eat food cooked in Nonstick Pan. She is very smart and health oriented lady.

    Oil is equally important for our body. Food without oil will cause gastric problems.
    Don’t go by myth that oil is harmful. Yes refined oil is harmful. But our Indian traditional oil are gud for health.

      @@rizupatnaik8201 oil helps in digestion n absorption of nutrients. Food without oil doesn’t get digested properly which causes acidity and gas. Pulses like rajma chhole etc should not be taken without fat. Acidity n gas leads to heart problem like palpitation, heart burn etc.
      obesity is caused by over eating/ wrong eating habits not because of oil.
      I’m saying this from my own experience. I have hypothyroidism. To lose wait I tried all these non oily food etc n suffered a lot like hormonal imbalances, tricardia etc.
      But after switching to healthy diet which includes oil as well, I’ve lost a gud amount of weight. Heart issues also solved.
      I’ve done a course on nutrition from one of the western universities, and as per them , indian n Asian foods and food patterns are the healthiest one.
      Our grandparents use to have every type of food n they lived more healthier life than us. Our half knowledge has led to more health related issues.

      With these zero oil food, person will have gastric issues like gas, low absorption of nutrients. Gas will have negative effect on heart. Some oil is needed for the proper functioning of our body.

    It is true that , in our INDIAN culture , we take oil&spice free food for ten days in a funeral days (from the day of a death from our family (Bansha) member!
    Many times the head of family and other elder members face to understand the mentality of children . They never take food without oil and spice.

    With all respect for you, Ghee is a super food, don't bad name it, refined oil is dangerous but ghee is another name for health

      Right.. Ghee is good for health.. It contains omega 3..but agar isko uper se daal k khao to hi good good for health h.. Agar tadke me daal diya to vo bhi utna hi bura h jitna ki refined

      @@shivanisharma-dy2sy I doubt this point, I will have to research about it. But one thing I know is Ghee has the highest boiling point so it does not loose its properties when heated for more than 100 c degrees. But i need to research about the point u said.

      Excellent recipes. Thank you. But according to Ayurveda, milk or cream with anything salty is no less than poison. Though we always add milk and cream in our dishes, it's against Ayurvedic dietary rules and can only harm our body

    Awesome way to cook ma'am. I am going to try this for sure.
    Just one thing: do you think that the amount fats someone is able to reduce by making it zero oil is almost offset by fats from adding paneer and curd. You may want to suggest plant based curd and tofu as an alternative.

      @@chingubaby5865 sure, please quote some links instead of an open ended, "study more". I think I did my study and didn't find any evidence based and independently funded paper which suggests that.
      If you need, I can surely share multiple research papers which suggests dairy is bad for cholesterol situations and it's cacein protein leads to cancer. Read The China Study for starters.

      It's a very important video for them.
      Also when someone of your home dies...(Hope it doesn't happen)
      You can't make food by using oil and haldi so it's important in that way too(I don't know it's applicable to all religions)

    My mom also cook zero oil thali for my father becoz he is a dialytic patient....
    This is best for the patients who is on dialysis
    This type of food is helpful in decreasing the creatinine level...

    Non stick pan or else have Teflon coating which is very dangerous for health, please consider it.

      My grandmother and mother in law don't like non-stick pen or kadai.

    Zero oil recipes are mostly for diet conscious ppl and for ppl who count calories , it was funny though using cream and nuts to prepare a zero oil recipe which is prepared without oil to make it healthy.

      Fats from nuts and seeds are healthy natural fats and are from whole sources not refined. Zero oil means no refined oil which is processed in industries. Most Indians use large amount of refined oil in day to day recipes.

    Though they are healthy recipes but cooking in nonstick utensils are very harmful.........is'nt it ?
    We should make these healthy recipes in pottery (mitti ke bartan) to make it more nutritious.
