      I had to wait a few days until we went to get the seasoning, but I have done this twice now, and it's delicious. It's been several years since I have been to Longhorn, but that was my favorite go-to, and if this isn't exactly like that, then it's at least as good if not better than I remember. Great tip.

    I tried this method tonight. I wrapped and left in the refrigerator for 6 hours. It was the best ribeye I ever cooked.

    Huh. I usually use montreal steak seasoning, but never thought to wrap it and then remove the excess. Good tip! I'll give it a shot.

    Thought you might like to know but I saw a recent video of a guy who did a good experiment to see whether the resting thing is a myth and he found out that it is. The steak he rested had the same amount of moisture retention as the steak he didn't.

      I was wondering if anyone was going to tell him. Also letting the steaks come up to room temperature doesn't do anything; you can actually grill frozen steaks. I smoke my steaks real low around 180f-200 for about 40 minutes with fresh onion and garlic on the coals, until they reach 100f internal, then sear them over direct flame. Now that does something. Montreal seasoning is a good choice, but I prefer salt and pepper.

    I like to rub some dry thyme before grilling. It adds a nice flavor to the steak.

    The first ingredient in Montreal steak seasoning is salt. This three step method is a dry brine technique. Respectfully, W.S.

      There's no question that using the seasoning pulls the moisture out of the meat. That's why I used the plastic wrap. The plastic wrap prevents the moisture from evaporating. Eventually the steak reabsorbs the moisture along with the flavor of the seasoning. Mike 🧔
