Vegan what I eat in a day/ Easy meals for weight loss/ Starch Solution/ 50 - 50 plate

  • Follow me on my weight loss journey and see what I eat in a day on a vegan low fat high carb plant based diet. I follow Dr. McDougall's Starch Solution and Maximum weight loss plans including 50/50 plate whenever I can.
    In this week's video, I show you two delicious meals suitable for weight loss: Curried lentil and vegetable soup, and pasta with spicy tomato and vegetable sauce. These meals are low fat but will keep you full and satisfied as they are full of fibre and goodness.

    Curried lentil soup (serves 2 - 3):
    1/2 leek
    1 carrot
    1 potato
    2 garlic cloves
    1/2 tsp turmeric
    1 tsp curry powder
    1/2 tsp paprika powder
    1/2 vegetable stock cube
    1/3 can of tomato
    1 tsp grated ginger
    1/2 cup of red lentils
    Salt & pepper per taste
    Pasta with tomato & vegetable sauce (serves 1):
    1/2 red pepper
    1/2 large courgette
    1/2 aubergine
    1 tsp smoked paprika
    1 tsp garlic powder
    1/2 tsp all purpose seasoning
    1/2 small onion
    2 garlic cloves
    1/2 can of tomato
    1 tsp tomato paste
    1/2 tsp chilli flakes
    1 tsp oregano
    Salt per taste
    2 tsp of capers
    Basil for garnish
    100g of yellow pea pasta
