Hi Guys, thanks ever so much!!! I just finished making the orange sauce for my Lumpia it's cooling tastes solo good. The last time I had these was 20yrs ago in Calif. When I went to visit family. My moms neighbors are Filipino .They a batch for Christmas and sent over a platter ,I couldn't stay out of them. So thank you again. I've frozen chick Bao Buns. Waiting for steamer to arrive.

Looks interesting... I will try your flour and cornstarch dough. I normally use cake flour and I slow cook my asado filling (almost same ingredients to yours)... Easy but still yummy 😋

I think because of the amount of cornstarch in your recipe, the dough is too dense and a bit chewy. Instead of 120g. I suggest only 30g. of cornstarch 0r use cake flour for softer and lighter buns. My husband and my daughter prefer the soft and lighter buns. I love making and trying new things to improve my cooking. My version of dough: 300g cake flour 70g sugar 9g. Baking powder 7g. Instant yeast 150ml lukewarm water 2Tbsp. Vegetable oil

Hi Shirley - yes, you can bake the siopao also. I'd suggest brushing with egg wash and baking at 350 F (175 C) for 20 to 25 minutes or until the buns are golden brown. Hope this helps! :)

Hi Sheryl - for a non-alcoholic substitute for the cooking rice wine, I'd suggest using chicken stock or chicken broth. Though it won't provide the same amount of flavor. Hope this helps! :)

Hi Francis - I don't have a bread machine so I have no personal experience with it. But I believe you should be able to make this dough with the same ingredients and just follow the procedures you know how to do using your machine. Just let it complete its kneading cycle, and then continue the recipe like in the video. Hope this helps! :)

Hi Mae - thanks for your comment! Very kind of you to say. The reason the baking powder is added last is to maximize its rising effect on the dough. Baking powder produces some of its bubbles when it gets wet, and produces bubbles again when it is heated. If baking powder is added at the beginning, it will mix in with the water from the wet ingredients, and the dry acid and base (components of baking powder) will go into solution and start to produce bubbles. Adding it at the end will prevent this premature bubbling, so it will produce the maximum carbon dioxide bubbles when the buns are steaming, which makes the dough more fluffy. Hope this helps! :)

Hi Francis - I don't have a bread machine so I have no personal experience with it. But I believe you should be able to make this dough with the same ingredients and just follow the procedures you know how to do using your machine. Just let it complete its kneading cycle, and then continue the recipe like in the video. Hope this helps! :)

I'm about to make it tomorrow just wondering if what the cornstarch does to the dough? I'm just curious, I've made several recipes of it and the dough always came out rubbery.
Hi Phoenne - using the mixture of cornstarch and all-purpose flour reduces the protein content, decreasing gluten formation, which creates a more tender texture compared to using all-purpose flour alone. Gluten also forms if you knead the dough too forcefully. So I'd suggest mixing on the lowest speed possible, and avoid over-kneading it. Hope this helps! :)
Hi Kurt! I can't wait to make this! Question: How will mixing the dough be different if I use a hand mixer with a hook attachment? This might be a dumb question, but I really struggle making a chewy dough.

Hi Mae - thanks for your comment! Very kind of you to say. The reason the baking powder is added last is to maximize its rising effect on the dough.
Baking powder produces some of its bubbles when it gets wet, and produces bubbles again when it is heated.
If baking powder is added at the beginning, it will mix in with the water from the wet ingredients, and the dry acid and base (components of baking powder) will go into solution and start to produce bubbles. Adding it at the end will prevent this premature bubbling, so it will produce the maximum carbon dioxide bubbles when the buns are steaming, which makes the dough more fluffy.
