    I've gotta be honest, the rise on these breads looks ass

      You’re right, they do not rise much. Corn has no gluten and rye flour has very little gluten so typically without a gluten matrix you cannot trap the CO2 which makes most wheat bread rise. These bread tend to be denser than a typical than an all wheat flour bread
