How to make Traditional Portuguese Corn Bread aka BROA

  • Olá Ananás, how are you, my people?
    Broa is made from a mixture of cornmeal and rye or wheat flour and is leavened with yeast rather than baking powder or baking soda.
    250g Cornflour
    200g Whole-wheat flour
    10g Yeast
    1 tsp salt
    300 ml hot water
    100ml cold water
    100g Wheat flour
    Preheat the oven to 200°C.
    Mix all the ingredients. Let it rise for 1 hour.
    Add 80g of wheat flour. Mix
    Transfer the dough to an oven tray.
    Sprinkle the broa with the remaining wheat flour and bring to the oven previously heated to 200 ºC
    Bake for 40 minutes.
    Let it cool down.

    Broa é feito de uma mistura de farinha de milho e centeio ou farinha de trigo e é fermentado com fermento padeiro em vez de bicarbonato de sódio ou fermento em pó.
    Receita:
    250g de farinha de milho
    200g de farinha de trigo integral
    10g de fermento padeiro
    1 colher de chá de sal
    300 ml de água quente
    100ml de água fria
    100g de farinha de trigo
    Pré-aqueça o forno a 200 ° C.
    Misture todos os ingredientes. Deixe crescer por 1 hora.
    Adicione 80g de farinha de trigo. Misturar
    Transfira a massa para uma assadeira.
    Polvilhe a broa com o restante da farinha de trigo e leve ao forno previamente aquecido a 200 ºC
    Asse por 40 minutos.
    Deixe esfriar.

    Broa de milho is my favorite bread! It only has a downside: it doesn't matter how careful you are, you always end with flour somewhere in your clothes...

    OHHHHH YEEESSS! This was so beautiful 💖 I love seeing traditional food being made and how lovely by those amazing women. They work so hard, and put so much love and care into it. It’s so inspiring! I’ve never been to Portugal yet or tasted that bread but I know it my heart it’s just as every bit as amazing as you say 🙏🏻💖🌱

    Loved this bread. My favorite authentic of all time and old recipe as a tradation. I raised in Portugal/Azores and moved here in America with my parents when i was 5. I dont liked here in America. I am going back to Azores for good soon. I hate Portuguese style at the restaruant and bakery stores in America. They dont taste good and not the same as in Azores/Portugal.

      It's because of the ingredients my friend. In US the ingredients are almost all genetically modified which makes the food almost without flavor (tasteless), you can see the difference between the eggs (On the egg yolk) there and here. They use also a lot of soy. 🤷‍♂️
      Unfortunately the regulations for food there sucks!

    Raised in a Portuguese household and now living in the U.S. South, I have a huge appreciation for cornbread of all types. Broa is still my favorite. Also, I miss my grandma

    Wow this is beautiful! I've been to Portugal many times and the old women are always so friendly when you tell them bom dia they always smile and great you back :) they also all seem to wear the same clothes as her haha
