    Words of advice: make the chestnut meal before you begin anything else. It takes longer than you think, especially if you’re a novice with chestnuts. This way your beautiful egg white won’t turn into a puddle in the fridge while you’re peeling and chopping nuts. That said, this is marvelous. Warm. Not too sweet and just a hint of nutty crunch.

      Oven temperature should be between 250 and 300°F Basically after it has been in the oven for an hour, you could adjust the temperature of the Alcatra so that it is at a low simmer-you should see the Alcatra at very light boil or simmer just a few bubbles. 🍻

      To prevent curdling:don’t use too much: about a ratio of a half a teaspoon of lemon juice or vinegar per cup of cream should be safe. * Add acid gradually: This gives the cream a chance to adjust. 🍻

    Hello, what can you do with these beans? I eat KETO and have been looking desperately for real recipes ( not just “ toss the beans into a keto salad“ ). I bought two huge jars with the intention of recreating refried beans ( even if they are not black) because I wanted to make a keto bean and cheese burrito; but once I tried them I realized they were too hard and the texture didn’t lend itself to be mashed like regular black beans.     Nice job making up your own recipe but the recipe does not include caramelized sugar. It takes milk sugar eggs and a little cinnamon. It takes 3 to 4 hours stirring almost the whole time. First the sugar and milk for the first 2 hours and then the egg yolks very slowly into the hot mixture. It's all done on the stove. Then it gets baked in the shell. My parents are from Graciosa, and my mother was given the original recipe from the original owner of the favtory that makes them.

    I was just in Porto a few weeks ago, I went to locally owned restaurant, and I meant it like they couldn't speak English at all. But we manage to get what we wanted, a local Francesinha. And IT WAS AMAZING.

    McCormick has a dry spice blend called "Pickling Spice" that works well for this type of recipe. I use a spice ball (a stainless steel egg shaped filter). My family's origin is Oa Jorge and Tercciea. I am currently cooking an Alcatra similar flavor less juice. (Made with a better cut of meat.)

      Happy to hear you enjoyed the video. This is a one pot dish because your protein, vegetables, and Star cook together no side dish as necessary. You could always enhance the meal with one of the mini Portuguese breads found on my channel or desserts. 🍻

    Looks good. Just some things I would tweak. First rub the inside of the clay pot with pork fat(lard). Try using smoked pork belly once you put all your meat top it off with butter. And I would omit the tomato paste for this dish just red wine no stock no beer no water just red wine! And enjoy.

    I had the pleasure of working with a Portuguese family at a bakery I worked at and they made this for our lunch all the time. We always had it with caramelized onions as well. I love your idea of using the cooked marinade to flavor the bread!
