Made this with last night and it was a hit! I used carrot, onion, zucchini, and garlic cloves instead of the mushrooms and celery. Followed all the same steps and it was sooo delicious! Very moist and flavorful. I used less topping and made a side of cauliflower mash and broccoli...perfect HEALTHY comfort food! Thanks again Laura...you never steer me wrong!
I just want to say that I have been making this recipe for the last 5 years and it has definitely become a staple in my household. Everyone who has tried it always raves about it and now everyone tune I make it I ALWAYS have to make 1 extra loaf for left overs

Ha, I just made meatloaf for dinner. What a coincidence. My go-to meatloaf recipe uses half ground beef and half Italian sausage. Sometimes sweet, sometimes mild.. depends on my mood. I would use hot, but my mother isn't big on spicy food.
hi Laura, I'm 66yrs old, adore you & your videos. Had to leave you a note because in all my years I've never made a meatloaf I could eat. Not beef and surprisingly not turkey. I no longer can eat beef and a friend was raving about her turkey meatloaf, but I can't see dumping sour cream into a meatloaf..so I turned to you. Luckily I had all the veges you ground up, sauteed them (had to drain them first, quite watery), anyway, the meatloaf is sooo moist, flavorful and delicious I couldn't believe it. THIS RECIPE IS INCREDIBLE!! I have enough for at least 3 more meals so its economical as well. Thank you so very much. Best to you & your family.
I like to use 1/2 Ground Turkey with 1/2 Ground Chuck (85/15 ground beef). It turns out wonderful.

My family's favorite meal is beef meatloaf with mashed potatoes. I was worried to try this recipe but let me just say, we all thought it was better than our original! I also tried your cauliflower mash as a substitute for mashed potatoes and that was delicious. Thank you for giving my family a more "guilt free" option to our favorite dinner! P.s. It really does make a yummy sandwich the next day!

Well, I made this recipe tonight and it came out FANTASTIC. I didn't think a turkey meatloaf could be this good. First I used 3LBS of turkey because I needed a big loaf so I increased all the ingredients by about 1/3. I ran short of Italian seasoning so I sort of made up my own. Anyway, came out great. Along with the meatloaf I made your Ribolita veggie soup. I left out the Kale but it too came out wonderful. I'll be making both again in the future. Thank you for these two recipes and all your others.
