Honestly, this is how training works in a commercial kitchen. You just learn how to prepare the items on the menu, learn how to do the prep and clean up, then get on with getting on.

@@stapuft Serious dedication doesn't only come from going to culinary school. Plenty of chefs go through what is basically an apprenticeship at restaurants. It's just a matter of how much one is willing to put into the pursuit of the skills and what responsibilities that one is willing to take on.
@@tessat338 just going to school doesn't make you a chef either. you have to basically BREATHE culinary arts, live for it, chefs are the FIRST ones in the restaurant, and the LAST ones to leave, they work 14-18 hour days, on the regular, just because they FEEL they have to, not because their boss forces them to. chefs dont just go through the motions, they put their ALL into everything, ACTIVELY doing theings they have no confidence or skill in, JUST to build up said confidence and skill, so that IF they ever have to do it again, they can. chefs LOVE what they do, no matter HOW MUCH it literally kills them... both of them can and do make GREAT FOOD, but cooks, are just going through the motions, chefs, are actively trying, with every fiber of their being.
I worked the line at Taco Bell for four years and your Crunchwrap folding technique is better than a lot of my old co-workers. If I had one small criticism, it's put the sauce directly on the tostada and then top with the vegetables or toss the vegetables in the sauce. It reduces the chances of leakage. I'd also recommend putting some weight on top of the Crunchwrap while grilling to emulate the clamshell grills they use at the restaurant (or use a panini press) to get a better seal. And for anyone that can't find the big tortillas, you can use the regular sized 10" ones and top with a small tortilla like you used for the toastadas before folding. It's a trick we used to use when we'd run out of 12" ones.
as someone who is 7 months pregnant and constantly craving crunchwraps but doesn’t want to eat taco bell quality food, i will be doing this soon. maybe not wheat tortillas because they made me sick last time i ate them, but i will be taking the basic notes Babish has presented.
update: she has decided that she wanted to be here a month early. we welcomed our baby girl 1/10/23 at 4:17pm. she’s currently too small for newborn clothes but too big for premie clothes so we’re sticking with gowns until she grows a little more. she has respiratory issues so there has to be at least one person awake at all times to make sure she doesn’t have any issues in the middle of the night and she has a upper lip tie and a tongue tie so she has problems nursing but she’s been a little trooper and is getting better by the day. ❤️

I would replace the chickpea hashbrown with a sweet potato hashbrown! Seasoned savory, not sweet. If you boiled the potatoes first, then smashed them, formed them into a patty, then air fried them - it would probably be perfectly fluffy on the inside and crunchy on the outside! I would probably make it like I'm making gnocchi so that the patty would hold it's shape. Season it with some sage, thyme, rosemary, garlic & onion. Now I want to make it lol

I've needed this. Crunchwraps are like the only thing i love at Taco Bell, but to see an amazing healthy version is greatly appreciated. Also a collab between two of my favorite youtubers.
I like this because everyone thinks healthy is salads and blandness but you can absolutely have that cheese or that burger but ingredient’s and moderation of foods is where it’s at. Trust me the burger you make from a quality meat with quality ingredients will definitely outweigh the McDonalds value meal in flavor while also being healthier for you.

I think the chick pea "sausage' patty could work if you added more breakfast sausage seasoning than you would normally put in sausage, and maybe retained some moisture by cooking at a higher temperature for a shorter time.
the chickpea patty wasn’t attempting to be sausage…that’s what the chicken sausage was for. they mentioned several times that the chickpea patty was replacing a hash brown.

@@notahotshot I really think different bodies equate to different levels of harm when it comes to artificial sweeteners. Maybe for a non-diabetic person it's better to avoid them, but if someone is diabetic they may be much safer than the alternative.

I wonder if the chickpeas would be less grainy if you simmered them for a while before making the patties? I've found it makes a significant difference if I do that when I make hummus.

Definitely a version of this that includes the Poblano is the Overstuffed Quesadillas from El Pollo Loco! There's a Poblano Chicken Quesadilla that we recently kind of eyeballed and made with ingredients we bought at a Mexican market, with the large tortillas and everything. We didn't air-fry anything (you do not need to if you don't own one), only grilled, and used mozzarella. It was really delicious! And it tasted mostly like it, and probably without all the preservatives too. And even better yet, the $10-12 dollars we'd spend getting one, made us six! I'm glad you're making these kinds of videos! It comes at an interesting time in my life where we are doing the same for the sake of my own health and it's such a satisfying thing to do and also see others do. Thank you!!

I always hated how little veggies Taco Bell put in the crunch wraps. When I make it I LOAD IT DOWN with veggies and it always turns out better. I’m gonna save this recipe cause I’m always wanting to aim healthier.

My favorite taco hack: use cabbage instead of lettuce! It is more nutritionally dense and retains it's crunch better with cooking, unlike lettuce.

@@DrBrangar tbf, he just did it to speed up making a béchamel, which can easy be done on the stove. It just requires whisking by hand
You don't need a $600 blender to make that exact cheese sauce. It just speeds up the process. But I get your point. "I can't replicate what you did, because I only have regular consumer kitchen equipment, and not a hundred thousand dollar studio kitchen."
