    Thanks! I was up late last night making your jellof rice, moimoi (again) and fried Egusi. Was rather proud of myself.       That was well explained ,last month I registered for a short course ,pastry and bakery. Meat pie was one of the items we made. At first it gave me problems on how to make it but later on I made it .I'm so proud of you because you demonstrated it well and now I can do it well without fear... Thanks

      +CHRISTIAN CHUKWUMA, hi for 10 cups of flour, you'll need 6 sticks of margerine or 679g of margerine, 1 1/2 teaspoon of salt, 1 teaspoon of nutmeg, 1 teaspoon of baking powder and if you want a the water quantity will depend but I would sprinkle the water on the flour to mix and once you get a smooth kind of dough the pie should come out good. thanks

    Nne, I tried this recipe it was the bomb. I have been using butter and my dough was always very hard to roll out. This is the first time I had dough that was easy to roll. Nne oga-adiri gi na Nna.

    excellent video Thanks for the detailed explanation. I have a child who is allergic to egg in all its forms, so what can I use for sealant and also egg wash? I have had problems with sealing my meat pies due to this, but I believe I may be able to use milk instead of egg wash. Am I wrong?

      Yes, you can use milk to glaze. I don't know what else you can use as sealant. When closing with the fork, make sure the top and bottom dough are well combined, that should keep the pies from opening. It's actually what does the trick because even if you rub enough egg, if the flaps of dough are not well combined, the pies will still open up in the oven.

      For egg, one should be enough for 1 kg flour, you do not want it to weaken the dough.

    Hi Flo..thanks for all your tutorials, really helpful. My meatpie pastry always comes out of too flaky and DRY at the end. What am I doing wrong. Like you said, could be the butter. I currently use 500g of butter for 1kg flour as I was once advised to use the best butter/spreadable but I will try margarine. Secondly, because it is always said not to knead dough to long. I try not to, so the dough still appears crackly before putting away to rest. Am I not putting enough water?

    I've seen a lot of people add nutmeg to the flower for their dough do you add nutmeg? Also what happens if I get too much water should I just add more flour? Also thyme is pronounced time

      Virginia Ogunsile yes I've added nutmeg before because some people asked me to try it. I did not notice any difference in the taste of the meat pies. The particles of nutmeg gave the pies a spotted look which I did not like.
      Yes, sprinkle some flour when you add a tad too much water but I would recommend being careful so you do not add too much because you will not achieve a good mix when you add flour to the already forming dough. Half a cup of water is all you need for this quantity of flour. The dough will soften more when you leave the it to rest.
