Isle of Man TT 2 and 3 are open map motorcycle games where you can pick your roads (but can't drive off road), but Ride 1 through 5 are definitely not open map or open world, though I wish it offered an open map in addition to the tracks. The Crew 2 is open world with bikes but online only. Test Drive Unlimited 1 was open world with motorcycles, as is Burnout Paradise with the DLC bikes. Sadly, real world manufactured motorcycles are often DLC in open world games.
