These were good.. I used cheese curds and fried thin in coconut oil. The secret for me was to let the hash browns sit for a while so the cheese starts to glue up. Then they stay together. Very good. My son loved them.

Thank you so much for this recipe--Have really been missing hash browns on Keto. Just now made these for lunch. When I was ricing the cauliflower in my Vita Mix,I added a little onion & red bell pepper to it. I like my hash browns crispy so pan fried them in butter & added bacon bits & a little cheddar cheese on top. Amazing!! Can't even tell it's cauliflower instead of potatoes--will be making these often. LOVE your channel!

Hi, I've just started keto diet January, & I love it I'm down a bout 6lbs maybe more. I started with Dr. Berg on line got the "rules" down. Started watching you guys ( the two of you are so cute😁) Your videos have been very helpful. I just made hash browns I should have gone back because I didn't squeeze them or nuke; I put little red bell pepper, dill, onion & I'm going to eat sour cream on top😋their for dinner 'cause I made cauliflower fried rice for lunch with is my main meal at 2:00 then I may just have Green vibrance shake tonight. I've found the Kombucha really helpful in keeping myself satisfied as well as Pelleogreeno mineral water with berry or coke stevia I was wondering if drinking a lot of stevia spikes the insulin & keeps you from losing more weight? I know too much water you can lose elect lites. I just find it keeps replace my glass of wine & it satisfies my sweet tooth too. So as long as I was grating cauliflower I do two ways, & the result of not squeezing cauliflower it came out a little more eggy perhaps. Thanks for all your info.Connie

newbie here - maybe start with dehydrated cauliflower? just using it dry, like crumbles? I have food storage and you can buy a #10 (almost a gallon) can of dried cauliflower for cheap and not have to do all the other prep. I would try it, but I have none at the moment. Might get some crunch with it too.
