    Very creative! I wonder… if you salted the shredded daikon, and let it stand for 30 mins, then squeeze out all the water. Add the pork panko, seasonings, and a tablespoon of coconut flour, and an egg to bind. Seems it might make a nice potato cake.

      :) Amazing, I just wanted to suggest the salting - waiting - squeezing the liquid "procedure". I do it all the time with radish, I am from Germany I used the radish to substitute potato in "puffer" - that's kind of a German version of hash browns and when they are properly squeezed out with a cheese cloth or clean kitchen towel, it works like a charm and they crips up even without the genius ingredients in this recipe (which I am gonna try of course).

    I grow multiple varieties of the smaller red and purple radishes. I slice and steam them skins on. Using some steamer water, I blend them with butter and fresh parmesan cheese. Makes pink faux mash potatoes or soup if using more water. 😋 Season to taste if desired with salt, pepper and garlic powder.

    What a great option! I've been making thin little crisp patties with cooked cauliflower, a little bit of diced onion, 1 egg white, powdered parmesan cheese, a touch of xanthum gum and the same spices. I fry in butter to be more reminiscent of my family's fried kartofflen - no breakfast with fried eggs is complete without it to sop up and be coated with the runny egg yolk. I've tried using red radishes but they proved too watery ... I'll definitely be on the lookout for a good-sized daikon radish to try this out!!

    Had breakfast for dinner last night and decided to give these a try. SOOOO GOOOOOD!!! If I didn't know, you couldn't have convinced me they weren't potato. Super crispy, just how I like them.
    I was a little hesitant about the radish. I nearly tried it with kohlrabi or swede first, but figured I'd better get a baseline. Followed the recipe exactly, though I did squeeze extra moisture out.
    Maybe not for prople that like fluffy hash browns, but these are amazing for those that like them crispy. Nili, you're brilliant!

    Double yolk! I worked as a line cook in a diner for 3 years in college and cracked a few thousand eggs in my day, so I saw my fair share. Actually fairly common but still fun to see.

    I cut my daikon, salt them and then dry them out on a baking sheet in the oven on low for a bit. It helps get that extra moisture out.

    So yum! These definitely help fill the hashbrown niche! I added diced onions and some "mashed potato" extract (not really sure how much that brought to the party). I think next time I will spend a couple of minutes managing at least some of the moisture, possibly doing the salt/sweat thing or even just wringing out some of the natural moisture, as my daikon was quite juicy, LOL

    Chris Cooking Nashville uses toasted gelatin to recreate a potato flavor and I’m thinking that would work for these as well. I’ve also used thin sliced daikon to create scalloped potatoes. I love to make 2KK’s chicken nuggets with your protein breading! Thank you for sharing!

    This is fantastic. Thank you for this recipe. I've always thought that the closest taste to potatoes when fried was turnips. I wonder if turnips would work the same way.

    Have you tried Chayote? They make really good "hash browns." Hubby's low carb and I grate it with onions and we both love them. They're a very versatile food.

    I wonder if dehydrating and rehydrating the daikon would help with the texture. That's usually how restaurant shredded hash browns come. They come in cartons and get rehydrated the night before

    I have not used the daikon radish before but I wonder if this would work with jicama as well? I will certainly have to try this to make a full breakfast on the weekends when I don’t do intermittent fasting and actually have breakfast 🍳

      Rutabaga is really good as a sub for au gratin potatoes and hash browns. Steve from Serious Keto has a rutabaga recipe. I’d never tried that vegetable before this summer. A church member was giving away giant ones and we were surprised how much we liked it. Not no carb by any means for but lower!

    I'm preparing to make this recipe and have looked through a lot of comments and watched two of your videos with this hashbrown recipe. I'm curious if the additional ingredients aren't the same as your breading recipe, it looks the same to me? I have it made up and am wondering, if it is the same, what the amount would be added to the shredded daikon? Thanks so much, I'm looking forward to eating these!

      Just spend $12-$15 for a scale... you'll use it more than you might think you would. Certain ingredients just don't measure correctly in a spoon or cup.
