I'm actually impressed by this video. You guys use most of the shark body, and nothing goes to waste, unlike other restaurants that just cut the sharks' fins and leave the whole body. This chef shows more respect for the animal.
This is caused by the change in ions moving through the muscle cells. The fish normally lives in salt water. When the ionic balance of sodium and magnesium changes (e.g through killing and washing in tap water), the muscles twitch. It is the same even for red meat but meats are not washed and they have a different ionic balance. I was very surprised to see this as well, but learned the reason why it occurs from seeing it in other species.
This reminds me of a traumatizing situation, When I was younger, my father was ripping out the guts of the fish and scaling him, The tank where the fish were was full of water, so I was curious to look and found the fish with an open belly, without a head SWIMMING

I'm Vietnamese and I had never heard of this dish until I saw this vid. I think this is more like an exotic dish kinda thing to go with alcohol than a street food. Don't ask me why, but some of the drinkers like these kinds of exotic food that normal people don't really care about.
I'm questioning about the service too, I did not see many places in vietnam with similar furniture and atmosphere offer anybody to help roll the rice paper and soak the meat into hotpot one by one like that. Maybe it's just for recording purpose? But if it is then there may be too much work for drinking party though, usually I saw people just eat grilled (squid, meat, etc) or other ready to eat food.

You are right that the shark died when its head was cut off. But your reasoning is wrong. It has nothing to do with the brain not responding fast enough to alert the body that the shark is dead. It happened because living cells linked to the spinal cord in sharks can respond to external stimuli without the use of the brain as the nervous tissue of a shark is more spread out. Also, the muscle tissue in the shark can still contract and retract in response to heat and change in movement of sodium ions.
My grandfather was a fisherman when I was young. He caught a shark and cooked it. I never like the meat. It’s rubbery and hard. Maybe it’s a different kind of shark and this shark’s meat looks more tender.

I hate to break it to you but the shark didn’t think anything. It’s a wild animal. It just reacts and that’s it. It doesn’t have the brain to conceive of existence, death, or self. It just eats, fucks, then dies more of the same. And before you feel too sad about this thing just remember that this creature would eat a baby without a seconds hesitation and he’d do it while the baby was still alive. I live in the Country no where near the ocean so I’ve never seen a shark cooked before. Heck I haven’t seen half the stuff that was cooked and it didn’t look good at all until the end when it was being dipped in the sauce. I live in the Country no where near the ocean so I’ve never seen a shark cooked before. Heck I haven’t seen half the stuff that was cooked and it didn’t look good at all until the end when it was being dipped in the sauce. I’ve never seen something that looked so gross to me yet looked so good in the end I wanted to eat it. lol. This was a cool video. The cooks done a great job. It amazes me how different food can be in different cultures. I would love to go around the world and try the different foods.

This is caused by the change in ions moving through the muscle cells. The fish normally lives in salt water. When the ionic balance of sodium and magnesium changes (e.g through killing and washing in tap water), the muscles twitch. It is the same even for red meat but meats are not washed and they have a different ionic balance. I was very surprised to see this as well, but learned the reason why it occurs from seeing it in other species.
