I didn't know mole could be made without chocolate! Who would have thought that the only mole I've had would have been a fairly recent innovation. Also, is that chicken just boiled/baked without any seasoning 👀? I always assumed they cooked the chicken in the sauce.

The history of chocolate in mole is so fascinating, also some people cook the chicken separately while others don't. It just depends on preference
