Oaxacan Mole Negro - THE MOST MYSTERIOUS Mexican Food in Oaxaca Village, Mexico!

    Cooking Oaxacan mole negro from scratch was one of the best food and cultural experiences I’ve ever had. On top of that, we didn’t really know what we were going to do when we set off in the morning… but things worked out for the best. Thank you to Javier and his family for inviting us into their home to cook amazing Oaxacan food!
    So in the morning the plan was
    Rent a van for the day
    Drive to a village
    Find a market
    Ask a nice Grandmother or Aunty to cook us some authentic Oaxacan mole negro
    Now, mole negro is one of the most complex and mysterious of all the Oaxacan Mexican food dishes. There’s such a huge mix of random ingredients in the dish, and no one knows for sure how it was invented or how it came about - there are only legends.
    After renting a van for the day, our driver Javier came to pick us up and we started talking with him to see if he knew anyone that would make us Oaxacan mole negro from scratch. He called his Mom, and she agreed!
    We picked up Mom in a place called Tlacolula de Matamoros, and we went straight to the market to buy all the ingredients for mole negro. Tlacolula de Matamoros is a predominantly Zapotec town, an Indigenous pre-Columbian civilization from the Valley of Oaxaca
    We got back to the house and started preparing all the ingredients. Let me tell you, mole negro has to be one of the most complex and mysterious of all Mexican food. It includes so many random and seemingly odd ingredients. It was a lot of fun to learn how to make it.
    The end result of the Oaxacan mole negro, was supreme. The sauce was so rich, chocolatey, and you could taste all the random ingredients in it - the nuts and dried fruit. It’s deliciously complex.
    Mole was amazing, and having the chance to hang out in a traditional Oaxacan village to cook was priceless.

    I am Swiss and lived in Switzerland most of my life ... my mother was Mexican (and my father Swiss german) .. I remember when she was doing Mole , she often invited many people for dinner. High level dinners with high level and well dressed people. For the occasion, sometimes she was doing Mole.
    What you see from this guy, like this impatience, an "overdone" emotion of expectation and at 24:50 his attitude ... is all true !! that is how i was feeling with my brother about the Mole of my mom.
    Ohh gosh .. .and the worse is that she was always doing waaaaaay more than needed because we would eat Mole for some more days for us, the family, at home. But sometimes, it was so good ... that invited people would still finish it ... meaning eating like 3 times what an adult would eat !! big was our frustration .. and sometimes she felt forced to make Mole again ... for us, the family. understanding our frustration.
    Mole is a unique dish ... truly unique. There is no such other dish in the world. I am 57yrs old, traveled A LOT in the world, ... My prefered foods are : Chateaubriand ... (french meat), Pekin lacked duck (China) ... well prepared caviar (with all the preparation and toasts) .... coocked and steamed lam from Azerbaidjan, In Qatar they did the same style of lam) ..... B U T my PREFERED DISH is chicken M O L E with frijoles and tortillas. The best dish in the word.
    Any mole will make it ... but the Oaxacan mole will just kill you..
    THE BEST FOOD IN THE WORLD. (And again ... i traveled well , i truly lived on 4 continents (no Australia) and tried so many foods ... .

      @bina nocht Frijoles are cooked beans - usually Pinto-type beans - , seasoned with salt and a couple of other ingredients for flavoring ( like garlic/onion, an herb or two). The Mexican herb epazote is usually added to beans while cooking, to counteract gas production in your digesting; it has a flavor too.

      I'm Mexican and even to me mole is always a Fiesta dish, there are different types of mole but poblano and Oaxaqueno moles are at the top. Great culinary culture in my country, everybody is welcome. No kidding when they say mexican culture is one of the warmest in the world.

    Did anyone notice at 9:26 how the older gentleman, likely the woman's husband, sat down with his wife and helped prepare the chilies.
    If folks would like a "top 5 things" to a long lasting marriage - that is definitely one of them. It warmed my heart to see it.

      I saw that too! And a very similar thought crossed my mind as well. He sat down and helped her with a pretty tedious task not only without being asked, but as if out of habit. If more men did this many marriages/people would be a lot better off.

    I lived in Oaxaca while studying at UNAM and the mole is amazing as all the food. The chapulines are just as delicious too.

      Mole is the best its my favorite neck and neck with the mexican enchiladas from michoacan. I will try to recreate this recepie, i knownit wont taste the same the ingredients are fresh and organic true to mexican soil. But ill try!       Handmade food is the way mexicans (and many others, like italians) show love. For example, our abuelitas will feed us non stop even if we are full; our dads will make a carne asada or barbacoa for the family, and our moms will give us a freshly handmade tortilla with butter or a pinch of salt. Food is a language that feeds the body, that feeds the soul.

      Yes Mexicans are kind and generous. I'm pretty sure Mark also paid or offer them compensation behind the scenes as he has with other families/ people. He is a good guy and understand the financial constraints and economic differences of people in different areas/countries. I also like that he is always respectful of other cultures and appreciates them.

      Oaxaca is a place that I have been a few times, my mother was born there; but even if people didn´t know who I was, they offer you water or a taco not expecting anything in exchange, they would do that with all the people from anywhere. Hope my english isn´t so bad.

    I stayed in Teotitlan de Valle in the early 80's. During the Danza de la Pluma fiesta the family made their Mole sauce with fresh chicken blood! We ate mole, tamales, and drank pulque for a week. Those were the days!!

    For those of you that had never been in Oaxaca it is absolutely beautiful and the mole has to be the best dish in the world there many varieties but if you ever have a chance to go you will never want to leave I have been all over the world and by far the best food in the land it is a magical place thanks Mark!!!!

      I love being Hispanic. Going and visiting where my parents grew up and learning the dishes they cooked and ate when they didnt have much is amazing. I'm so proud of my culture. We truly are wonderful people

    While visiting in Sonora, my uncle and I were going for an hours long drive to get supplies for his store. On our way (at 5am) we stopped at this little brick house way out in the middle of no where. This widowed old lady lived there all alone and he would check on her at times. As poor as she was she invited us in and insisted on making breakfast: hot coffee, some fried eggs, beans and homemade flour tortillas. That was one of the best breakfasts ever and I've never forgotten her kindness. Oh on the way back my uncle dropped off: flour, rice, sugar, coffee, and other foods for the old lady. Seems he bought her food all the time. Guess he was kind too.

      When you are living alone in isolated area you want or value visitors. Someone to chat with or do something for them. When delivering meals on wheels to shut ins it made me sad they had no family to visit or help them. So many of them just wanted to chat and talk. But had other meals to deliver so could not chat for too long.

    MOLE PASTE PROCEDURE BELOW-
    1) Roast the dry chillies, and also roast onions and garlic in live fire or broil them.
    2) Shallow fry almonds, walnuts, biscuts, sweet chocolate bread, cinnamon sticks, cloves and peppercorn, raisins, dry plums, plantain, mexican oregano and rosemary type herb, white sesame seeds, tomatoes and tomatillos, in veg oil or lard if you have it.
    3) Add everything except the chillies into a bowl and mix toghether
    4) Soak the chillies in warm water till soft.
    5) Grind everything togh to make the paste

    Watching this video made my mouth water! No joke! Chicken and mole is, by far, my favorite Mexican dish. Its something my grandmother made when I was young, so this really took me back. I'm 53 now and I can't tell you how much I miss those days of being at grandmas house when she worked for hours to make this delicious dish. I love you grandma, and thank you.

    This is a beautiful video. I lived a semester in México and was so impressed with the hospitality of the people and friendship. We found everything to taste better there, meat, vegetables and fruit, dairy, breads. ¡México no hay dos!

    What a fascinating video. When I was in my late teens I would cross the street and hang out with my brother-in-laws family (before he was my Cunado). Before mealtime his mom and sisters would make tortillas and prep for whatever meal they were having. I was always invited to eat with them and I never turned the opportunity down. I have to say, this was an eye opener for what I have missed. You are very fortunate to have experienced this.

    This came up in my feed, I thoroughly enjoyed it. The Mexican culture is so diverse. My Mexican friends speaks 4 languages; 2 indigenous from Vera Cruz, Spanish and English. I've been exposed to the cuisine and people for about 20 yrs now and I love them. They are loyal, generous and the food is much more than many of us thought. Please include Mexico in your prayers.     I don’t care if I offend people but Mexican food is the best food in the world. Not just with taste but with culture as well many of these recipes are traced down to Mayan, Aztec and other indigenous tribes from Mexico. Mexico is one of the few countries in the world to show respect and love with its indigenous people as seen with its lovely flag🇲🇽
    Like always what always makes the food better is the experience and the lovely people cooking it, a lot of people in Mexico will always invite you to eat if you go to their house, even if they don’t have much they always offer.

      It reminds me the Italian habit of cleaning the dish with a piece of bread after ate a saucy dish of pasta. In southern Italy this practice is named "scarpetta" which means "little shoes" because of the shape of the piece of bread.

    40 years ago I had the privilege of attending a family's quiceanara at a small village outside of Tehuacan. Chicken mole was served, among numerous other delicious foods. It was the only time I've had mole. I thought it was special then, but seeing this makes me finally realize how very special it was. Thanks for this delightful video, Mark!

      Brittanya Hope Milagro exactly!!! But the news is very much at fault. I spent a few weeks in various parts of Mexico recently and it was amazing! However I did notice that the news in Mexico does to its citizens what USA news does to us. Anyone who watches news in Mexico would think that if we stick our heads out the door of our homes a terrorist will blow us up! And we see that in Mexico you will be shot by a cartel if you set foot there. It’s all exaggerated on both sides...BIG TIME! I as well as many other tourists I encountered while in Mexico had a FANTASTIC TIME! I was walking in the plaza at 11:00 pm with a bunch of other people eating delicious food, talking, and laughing. It was great! Can’t wait to go back at the end of the year

    When she asked "how do I ask him if he wants more" that reminded me of my grandmothers back in el Rancho. They were always feeding me and if I told them I was full they would give me more lol. I thank god that I've experienced Mexico like this. It's a very powerful feeling of happiness. Thank you for making your amazing videos sir.

    Brings back so many memories, my family lived in Puebla, Puebla from 1995 to 1997 and the food was SO GREAT, the mole was outstanding and the people were wonderful!!!!!!!!!!!!!

    My mom was born in this exact village. I remember as a kid her telling me stories how she grew up and the different types of food she ate. My mother was a great cook and worked in the restuarant business for twenty years. Thank you for this amazing video it reminds of her.

      They are in fact zapotecs not latinos. This people are native and spoke native lenguage and spoke spanish too. México is so diverse that the word "latino" can be unacurrate.

    This is your best video. I love mole. I tried, ten years ago, to make it by myself. I turned out wonderfully. I can only imagine how much better it would be if cooked it out in nature, over a wood flame.
