Seems just like an extra complicated plain old American or British egg salad. I love egg salad, but I don’t know why you’d bother separating the yolks and mixing that part first. Also, I don’t think it’s necessary to poke the eggs before boiling, but that’s just my experience. Still, as usual, yours looks delicious!
@@elisachristine8254 no pro actually I use to have a hard time removing the shell then I realize eggs boiled till it cracked were easier to un-shell ..cause the water gets in between that thin layer in the shell and the egg white... they poke it so that water will get inside .Clever.
i did not have japanese mayo (had regular mayo) but a friend of mine gave me a bulldog worcestershire sauce i just added half spoon and mixed with the egg salad and my gawd that was delicious. ( no salt or peper sauce is enough)
I like mine with curry and tarragon, but my new favourite, which I had first in a high-end tea-room, was curiously Japanese and absolutely delicious -- egg salad with mayo and watanabe. A lot simpler than this carry-on and just delicious.
Yes, curried egg is great. I also use a little wasabi too. But my childhood favourite is egg mixed with Heinz salad cream and watercress on crusty white bread. Nowadays I cook the eggs in a little egg cooking machine and they come out perfect.

@@rachelcoleman4693 The brand is called Kewpie, and there are a number of steps that make it different... they use very high-quality eggs, they use Rice Vinegar rather than the much cheaper and common Distilled Vinegar, the emulsification process is some kind of complicated multi-stage process etc etc etc... but mostly it tastes better because they whack a ton of MSG into it.
fw1421 Japanese mayo uses apple or rice vinegar while American mayo uses distilled vinegar. Japanese mayo doesn’t add water. Japanese mayo always uses egg yolks instead of whole eggs like American mayo. Japanese mayo is a thicker, richer and sweeter condiment compared to American mayo due to cutting out the water and using apple/rice vinegar etc

Absolutely nothing. The Japanese historically and culturally never ate egg sandwiches, let alone bread or mashed egg with mayonaise. Just lame attempt at appropriating food which never belonged to them, Japanese eggg salad, Japanese spaghetti, Japanese tira-mi-su ....etc.
Seasoning the yolk before adding in the whites changes the flavor of the salad. It is spread evenly throughout the yolk cause the yolk sticks together very well, instead of having random bits of seasoning on the whites. It's a subtle difference, but it does taste better that way imo.
@@mawardesa2669 I have never experienced an egg cracking while boiling - typically they crack only if they've already got a crack in them and it was unseen. Poking a hole in an egg seems like a really unnecessary and potentially very messy step.
there are a lot of co2 in fresh egg. so if you punch a small hole on raw egg ,co2 will come out from small hole ,and the egg will become easy to peel. (you can use thumb tack too~)
Too complicated method of boiling eggs. Just drop that sucker in cold water in a pan, bring to boil, turn off heat cover for 8 minutes for the same doneness here. Done. No piercing, stirring, monitoring... nothing

Bick’s yum yum pickle juice with some of the mustard seeds that are in it mixed in added to mayo make for tasty egg salad. No sugar necessary. Add some finely chopped yum yums if you want as well. Luv that she served it crustless. Class. I steam eggs in pressure cooker for 4 minutes. Perfection.....and they peel effortlessly.

Egg shell removed easily when you puncture two holes ... Egg yolk color look good no dark ring...
The ice water bath is enough to easily shell the eggs.
