Tamagoyaki & Onigiri Breakfast Recipe

    TAMAGOYAKI
    3 Eggs (optional +1 yolk for deeper color)
    Chopped chives/spring onion
    1/4 tsp Mirin
    1/4 tsp Soy sauce
    Salt
    1/2 tsp Sugar (optional)
    Furikake (optional)
    You can also add 1 tsp sesame oil (1/2 tsp if using strong, pure sesame oil) for an interesting taste (normally with sugar). I do this sometimes when I get bored with regular tamagoyaki.
    ONIGIRI
    1/2 cup Japanese rice
    1 cup Water
    Furikake (any kind)
    Do not rinse the rice too much as you'll want to retain much of the starch for onigiri. Make sure to soak the Japanese rice for ~15 min before cooking. Put your flame on high; once the water starts rapidly boiling, set the flame to low/simmer. Once cooked, put it on high for 10sec, and then kill the flame. Let sit (lid on) for 10 min before opening. Or just use a rice cooker.
    You can add 1 tbsp sesame oil (1/2 tbsp if strong sesame oil) to the rice for a change - similar to how some Koreans do their crispy rice balls (jumeokbap?). If you can find small umeboshi (pickled plum), you can stick one inside the onigiri. Japanese umeboshi is best, but are normally pretty large. Chinese pickled plums on the other hand are normally smaller (but more sour, and I've never seen one that's pitted).
    TOOLS
    The ONIGIRI MOULDS I use are from Daiso and come in 2 sizes per pack. For bigger onigiri, you can use any other container e.g. a Japanese sandwich mould.
    The TAMAGOYAKI PAN is a simple one I got off Ebay for around A$50 (Japanese brand, made in China, but sturdy). A bit expensive for a small pan, but this one is surprisingly quite thick and from experience distributes heat really well. It is optional and you can use a regular round pan, but obviously a rectangular tamagoyaki pan makes things a whole lot easier.

    I am Japanese. For those that are curious: The sprinkles in the onigiri is furikake. You can get many different flavors and variety. The green stuff on the bootom of the triangles is nori. The pan is a special one called a makiyakinabe. In the tamagoyaki the dark liquid he used is shōyu(soy sauce). The light liquid is mirin(a kind of sweeter less alcoholic cooking rice wine). Green onion, and I assume it was salt in the grinder. He squeezed oil in the pan and spread it around with chopsticks and paper towel.

      Furikake comes in a wide variety and is a rice seasoning topper. It's very tasty and easily found in local Asian grocery stores.

      In a couple tries this will take not so long to prepare. Yeah, you have to cook the rice, but you can do the rest during that time. It's kind of easy! (Plus, there will be mornings when you won't do stuff and just eat biscuits and tea XD)

      This is entry level cooking. The toughest thing to make was waiting on the eggs and the roll which might take a total amateur like 2 or 3 tries.
      What is truly tough i think is pufferfish cutting. That is actually art.

      I do, but I'm a full time single dad. Show me a woman who appreciates love and devotion and I'll show you a unicorn.
      It doesn't take effort to show love, especially through cooking. Even oatmeal has great potential.
      Too many are wrapped up in the rat race to take 20 min to produce a beautiful, healthy, and delicious meal (including clean up). I feel sad that people think that such a simple and basic act is super human.
      Growing and preparing your own food is a divine gift of love. Do it, even if you think you can't. Eventually you will be your family's master chef.

      Michael Scott I’ve come a long way in ‘perfecting’ my rice balls by hand in just a day. I made about a full cup of rice and made 4 onigiri - I had one and so did my three siblings :)
      I think doing it by hand preserves the fluffiness of the rice in the center, and a mould would squish it too much and make it chewy. As long as your hands are generously wet with vinegar water, it is quite easy to get a hang of. :)

    The breakfast looks delicious, and I definitely learned from this video. But what you are really selling me on is the idea of the lifestyle, yeah? Alone in the morning, lovingly making comfort food breakfast in a beautiful city apartment. Kind of like something you’d see on Chef’s Kitchen :)

    I have an Onigiri business and here are a few more tips to improve Onigiri 🥰:
    1) add spicy tuna to the rice (doesn't need to be spicy if you can't handle it
    2) use spiced seaweed for more flavor
    3) wrap seaweed around the Onigiri so you don't just get the seaweed flavor at the bottom

    I know to many people it seems hard, but if you get a good book on it, and practice frequently, soon you will not want to eat regular food, like me. I have really learned a different way to cook with learning the art of Japanese cooking. It really is peaceful, of course you will make mistakes, but there are thankfully many from Japan that are willing to teach and share the art with others for free. No excuse to not learn. My favourite food to cook is Japanese , and there have been many times where I have cooked nothing but Japanese.... the goal is to one day be eating totally Japanese.... very clean way to eat and live!

    This is how i do my omelette everyday and I didn't even know it is a Japanese tradition. I've seen it so many times in anime but i always thought it was just an anime thing and it doesn't really happen in real life lol ! I'm glad I've found your channel :) I immediately subscribed ! Everything in this video is mesmerizing, and I'm really moved by the way those hands were touching the food. It felt like if the food was a fragile living heart that needs to be treated gracefully !
