That dough is over mixed. It will be too tough 😂😂😂. You want tender crust. Never knead pie crust! Dude don't add any hot sauce to the pie filling. That is a gentrified pie.
I understand were you are coming from but surprisingly, the pies were nice and tender when they were done and I didn't add hot sauce to the filling. If you like hot sauce in your filling then go for it. Jalapenos would be nice there I think. I wasn't trying to make an exact replica of someone else's recipe. Try it without kneading and see the difference. They will melt in your mouth. Just make it like pie crust and you will not believe the difference. I'm speaking from 50 1 years of experience. It makes a world of difference. People will burn their hands trying to get those pies fresh out the oil or the oven.

My mother-in-law was from Natchitoches and made the best Meat Pies, (& Peanut butter cookies), EVER!!!!
