  • New Orleans Native Charlie Andrew demonstrates on how to make Natchitoches Meat Pies from scratch. This recipe makes up to 25 medium sized pies and it is perfect for parties etc. This pie is also one of the main state foods of Louisiana. Hope you all will give this popular Louisiana pie a try.

    My mom was born in 1919 and she made a beef chunk onion and taters pie she called it pasty. One thing she put in it was 1/2 (half) box of black pepper. She put in a biscuit crust and baked it was served to us in spring..She never said why but I fell in love with it. Peace sweetie, have a great weekend.

    Quick Q&A for this video.
    1. Question- Can I use all beef instead of pork?
    Answer- Yes absolutely!
    2. Question- Can I use all pork instead of beef?
    Answer- Yes you can but I recommend you use the beef as well.
    3.Question- Can I bake my pies instead of frying them.
    Answer- Yes you can.
    4. Question- Can I add egg wash onto my pies before baking
    Answer- Yes absolutely!
    5. Question- Can I use all butter?
    Answer- Yes and no. It's best to use what the recipe calls for. With the butter and shortening combined it will result in more of a flaky crust.
    6. Question- Can I use all Shortening?
    Answer- Yes you can. You can also use lard for this recipe as well.
    7. Question- If you are baking the pies how long to bake and what's the oven temperture.
    Answer- Bake in a preheated 350 degree oven for 30 minutes or until the crust is a slight golden brown color.

      Hubig pies. That sounds good but I probably could make my pies better than Hubig's. The only thing I liked about their pies was the crust. Some of the fillings were good. I guess because this was when I was a kid. Never really tried them as an adult.

    I can finally make these at home! There are just a small scattering of recipes for these. My husband took me to that town a few years back and knew a gas station that makes these. He used to have a truck driving route there for restaurant deliveries. He got me a few of those pies and I got hooked! It's quite a drive from here in North Texas and now I can have them in my own kitchen. Thank you so much! I am so excited about these!

      CreoleKing m from. The monroe Louisiana area and we pronounce it the same way you do as well. I've heard people pronounce it several ways tho, lol.

      I've seen the word Natchitoches but I've never really heard how it's pronounced. Even when people pronounce the word I still can't pronounce it correctly lol

    Great looking pie! If you guys prefer a more wet filling, just add some water and cornstarch when cooking the meat whenaround 70% cooked, so the meat will be covered in small sauce-y protection and will let the meat absorb the liquide a bit!

    Appreciate all your videos! As a former northern Louisiana native now living in Alaska, I only get a taste of home by cooking it myself. Unfortunately, I wasn't taught at home.     husband has to retire. we already have a business and we are going to start selling crawfish pies because I ate some at Melrose Plantation and they were wonderful and going to make meat pies to sell as well.     Hey, charlie. Thank you for the recipe. Here in Brazil we have an infinity number of recipes of this kind of meatpie (or chicken-egg-calabrese-cheese-or-whatever-you-choose), being it deepfried or in the oven. We call it "pastel", you could check it out.

    My family is from Campti and I have seen wild rice in some meat pies. That could have been because my uncle would use boudin mixed with Ground beef. Also Beef Tallow, Turmeric and Yellow Curry give the pie dough some flavor. That is a Jamaican thing.

    Oh man oh man. As a kid growing up in campti and natchitoches, we would always walk around eating these at smoking on the red. ☺I love these and love making them. I like to bake them though, makes me feel less guilty eating them lol.

    Hey Charlie. I make my from scratch and with different ingredients and up north we called it empanadas they are made by Mexican people. Not black people up north. But I do cook lots of Hispanics food and make my to . They are delicious.. my son Puerto Rican so I make lot of Caribbean foods well is my soul food.👍👍👍😊its delicious food...

    For the Saints game tonight/supper tonight, I made this... I will admit, since I was spending time on your praline cake & smothered okra, I did not make your pastry crust. I used that pillsbury refrigerated one & rolled it out. But the filling..OMG-sooo good! I added a fresh jalapeño to my onion bell pepper garlic mix & was a tad heavier on the cayenne. My family was sooo happy! I’m glad I found you. I can’t wait to the next weekend I can cook your recipes.

    Very nice! In Paraguay and Argentina we add boiled eggs to the meat, to soften the strong taste of meat, to allow room for to add Tabasco to each bite.

    Natchitoches and Nacogdoches were Indian twins. Their father was the chief of the tribe. Seeing that he had a dilemma as to how the inheritance would potentially cause family problems the chief in his infinite wisdom gave Natchitoches and Nacogdoches each one of his favorite recipes and separated the boys so as not to create too much competition. Natchitoches got the meat pie recipe and stayed put. Nacogdoches went west with the brisket. They all lived happily ever after.

    Charlie thank you so much for sharing the recipe I'm from Houma living in Pittsburgh. my grandmother used to make them but she passed before i could get her recipes. If you could do one on fried shrimp patties (balls) that would be great. looking for more of your wonderful recipes from NOLA!!!

    Brutha, I made these today and like you, I beat the table because they were absolutely delish!!!!!! Instead of me making dough from scratch, I used biscuit dough and they turned out fine. I still have some filling left to make more. I saw a dipping sauce for meat pies online that I'm gonna try. Thanks for sharing your recipe! :)

      Yes black storm, they are eaten throughout the African diaspora. Meat pies are also eaten throughout west Africa. I don’t know why Cajuns (ytes) are claiming them. This is an African dish but they claim all Louisiana cuisine even though most are revamped African recipes.

America is a "melting pot" of cultures and many recipes are shared in different cultures anyway, with their own local ingredients.😁

    Grew up on these pies. Glad I found your video. It’s the most authentic. Sick of seeing “Cajun meat pies” bc its inaccurate. These pies are made throughout the African diaspora but especially all over west and central Africa. I hate how they claim African dishes.

    Nacogdoches is what you are saying which is in the state of Texas. My families was born and raised in Natchitoches pronounced Na-kuh-tuhsh. Which is in Louisiana And my mom can make the best meat pies ever!

    Making now. I forgot how long this process feels. Lol! I grew up on these but I don’t like the frozen ones. Plus I’m cutting sodium in my diet. So I figured it would be healthier to make them myself and adjust the seasonings. I have the original recipe in the Cane River Cuisine cookbook but I’m a visual learner. So your tips and techniques is taking away the stress of making these. In the past it was always so stressful working with the dough because the original dough is very wet. Also seeing how you ran the meat through the food processor and letting it drain really good I think will also make filling the pies much much easier.

      Elena Carter I'm from Massachusetts but now live in Georgia. They also call them Jamaican beef patties. They have a yellowish orange color dough. I don't know if they add tumeric or curry for that color. Charlie will tell us...lol
