Square does have a document-based verification step. You don't have to be from the US to sign up for Square's services, but you do need to be doing business in a market they support. Read more about acceptable documents here: squareup.com/help/ie/en/article/7442-required-documentation-for-sign-up
If you are processing a sales in-store and the customer would like it shipped, there are a couple of workarounds. First, you could place the order via your online store as if you are the customer, using their payment information and manually entering the payment information. The processing fees would be the online rate, though. Alternatively, you can create an open-price item for shipping fees and add the customer address in the order notes section. Currently, there is no built-in workflow for shipping in-person orders from the Square POS. Though customers have requested this feature, so Square may develop it in the future. 📥
