    At about 41:50 or so he talks about the cheese rind. A lot of things can be made from this leftover product and should not be discarded. Soup broth being the most common but here are many more. Just a tip incase someone didn't know.

    Excellent video..
    The biggest difference between these (European) Cheese and US cheese is the use of unpasteurized milk, which is pretty heavily regulated by Uncle Sam. If you think about it, when Europeans settled in the US they brought with them their trades. If you’d been a cheese maker for generations in Europe you brought with you all your knowledge and expertise with you to the new world.
    What I’m alluding to is this, if you can get past all the mass produced cheeses in the US, there are some great cheeses produced right here…mostly in Wisconsin. The artisan Wisc cheeses are every bit as good as the European cheeses, IMO…give them a try!

    I very much enjoyed this video. But I am feeling very unfulfilled and curious. The information provided above states that Leon and his wife retired, but not whether the business continued. What happened to all the wonderful cheese? Did the farm and cheese center stay in the family? Did they sell it? Did it close? Do they still live on the farm? I have a hard time picturing someone who so obviously loved what he did simply giving it all up. And dang it... I want to try some of the cheese!!!

    I really enjoyed watching this and have subscribed. This was exciting to hear the whole story, and they way the process was explained, was like I was having a chat with my grandfather, as he spoke very sternly and was direct, while dropping a laugh in between, I sure do miss him, anyhow, Thank you for taking the time to film this, and Mr. Leon Downey, I hope that your products are as animated as your commentary of the process... I hope that you ship to the U.S.A.!!! Is there a preferred time of the year to order for the greatest selection?

      but yes Dru, one of the places (he sends info and ingredients maybe) is someone makes it in NY I think he said.

    Leon, I hope your retirement is treating you well. I do not know if you look in on this video or not to read comments. I will first say that I quite enjoyed this documentary. If I was a tourist and in your time at your shop I would have enjoyed my visit there. I would like to ask you about your cheese culture. You called it "MT 33". I have attempted to find this culture and have had no luck. The only MT culture that I find is MT 1 for making Feta. If you or anyone else knows, what culture would I be looking for to make a cheese inspired by yours? I would not make yours of course, I am not you nor in your nation :) it would be my cheese in the end but on the journey there for that wonderful dry and crumbly cheese what is suggested?

      keeperofthegood MT33 is a starter culture named and made by Barbers in Ditcheat, Somerset. Go and visit them , then go and see John Bourne in Cheshire. Between those two and Leon, you will know everything you need.

    I just heard what you said about unpasteurized milk. I’ve been on the fence about this. Having pasteurized the milk yesterday and recognizing that you are still in business and have a professional business I have decided to stop pasteurizing the milk until I feel the urgency. I have 6 cheeses to my name and will follow your example for cleanliness.
    I noticed that you did not filter for bugs. This I must do with every lot.

      He said that a neighbouring farmer comes everyday to collect the whey (cheese water) for his pigs. It's highly nutritious
