I also didn’t know much about Onigiri before, but I’ve learn that you could actually put any type of filling that you would like to eat with rice. Traditionally it’s fish, but I’ve heard some using eggs, meats, or vegetables. The only difficulty is to make the rice right.
You can order onigiri molds on Amazon! I could never make mine by hand. I tried so many times, but could never perfect it. They come out so much faster using a mold too. Hope this helps!

Yes, the cooking wine mostly just adds a layer of sweetness. You could try adding sugar, white or brown sugar works decently in place of palm sugar. Just a very very small amount dissolved will do
All the wine does flavor wise is make it a little sweeter, so you could add a little brown sugar, palm sugar, or white sugar in a small amount and dissolve. Another alternative if you wanted to get a little crazy could be a juiced citrus fruit, or pomegranate juice.(again, in small amounts.)
I would like to ask if I can skip/substitute the cooking wine in the sauce as I dont have any, and inevitably i'm too lazy to go out and buy one ahaha.
I tried this for the first time and completely failed because the rice crumbled. I used short grain rice, but I might have washed it too much before cooking it. It still tastes good! Now I want to try making it again with the right technique this time lol

Pure boiled sushi rice I'd say, onigiri rice is usually leftover rice and sushi vinegar is typically only used for when you actually want to make sushi

Smh, it took me a while, I ended up having to go to the store and get more seaweed because I ran out after making 7 lol

Did u use hot rice? If yes maybe that's why, cuz it doesnt stick well, you should use kind of a cold rice

Vinegar
Beware of using white vinegar coz it's a strong ingredient. I'd suggest to use wine, rice or apple cider vinegar instead.

Sushi rice, or any sort of really sticky, glutinous short grain rice

My rice was falling apart when I was molding it . Is it because it wad just cooked and still warm? Is it better to use cold rice?
If the rice is too hot, it will not stick well. Use slightly cold rice. Then, make the rice balls with wet hands.❄️🍚+🖐🏻💦
