    Hello Kurt, I like to make this recipe. It really looks delicious and I appreciate how you demonstrated how to make it. I have some questions. For the frosting is it really necessary to add 2 tbsp of flour? just asking this dahil hindi siya dumaan sa pagluto. When it comes to flour like when I make polvoron ay niluluto kong mabuti to avoid stomach problem. For the baking pan, I can't find 9" what I got is 8" I just purchased it cause I really need to bake this cake next week. Can I use it? Thank you so much for sharing. 😊❤️and God bless🙏 .

      Hi Teresita - the raw all-purpose flour in the frosting is to thicken it and make it more stable. Just a little bit of flour (or cornstarch) in the frosting makes it a little stiffer and smoother, and helps it hold (not melt) at room temperature. But don’t add too much, otherwise the texture will become too grainy. Generally, it is not safe to eat raw flour or cornstarch etc. But with this very small amount (2 tbsp) it should be safe. And it's optional - so if you prefer not to put it in, you can leave it out, and the frosting should still work. And 8" pans should work for this recipe. Hope this helps! 😊

      Hi Nello. Red Velvet cakes are traditionally made with cream cheese frosting, which tend to be sweet. That said, you may make any changes that you see fit, any adjustments that will make this dish more enjoyable for you :)

      If you prefer the coconut flavor by itself, you can leave out the pandan extract and green coloring, and it will be just a plain yellow chiffon with coconut cake. Hope this helps! :)

      Hi Cam. If cake flour is not available, you can substitute with all purpose flour and cornstarch: for every 1 cup of cake flour needed, add 1 cup of AP flour, subtract 2 tbsp, then add 2 tbsp of cornstarch, and sift this together. This will act similar to cake flour.
      Cake flour has a lower protein content compared to AP flour - it creates a more tender texture, finer crumbs, and better rise, which are ideal for red velvet cakes like this. And substituting with AP flour + cornstarch combo imitates that. Hope this helps! :)

      Hello - thanks for your comment! I'm glad you like this recipe and that your Red Velvet Cake turned out well. Yes, you can make cupcakes using this recipe. The cooking time will be about 15 to 20 minutes at 350 degrees Fahrenheit for cupcakes. I'd say test it at 15 minutes with a toothpick. If it's not yet cooked keep checking every 2 minutes. Hope this helps! :)

      Hello - if buttermilk is not available, for each cup of buttermilk needed, you can use 1 tablespoon of white vinegar or lemon juice plus enough regular milk to measure 1 cup. Stir, then let stand for 5 minutes. You can also use 1 cup of plain yogurt or 1-3/4 teaspoons cream of tartar plus 1 cup regular milk. Hope this helps!

    Hello again! I just made this and it’s super moist and I love it! I just have a question, why is that when you beat the egg whites you didn’t add sugar or cream of tartar? What is the difference?

      Hi Taira, I'm glad your Red Velvet Cake turned out well!
      The sugar + cream of tartar technique used in the ube / mango / choco mocha cakes are for a chiffon cake. For chiffon cakes, the structure of the cake is created by the air bubbles trapped into the egg whites when you whip it into the meringue mixture. The air bubbles are what leaven the cake when it bakes. Cream of tartar and sugar helps to stabilize the egg whites, so that they whip up and gain volume.
      This Red Velvet Cake is technically not a chiffon cake. Red Velvet Cakes get most of the aeration in the batter from the acidic ingredients (buttermilk and vinegar) reacting with the bicarbonate in the baking soda / baking powder to create bubbles. In this recipe, I whip up the egg whites separately just to add a little more lightness to the cake as an extra boost. But don't use cream of tartar since the buttermilk/vinegar + baking soda/powder do most of the heavy lifting.

      You're using two 11" round pans? Or is it two 11" x 7" rectangular pans? If it's two 11" round pans (I've never seen this before), I'd suggest doubling the entire recipe as that will make a very big round cake. If you're using two 11" x 7" rectangular, I'd suggest multiplying the recipe x1.5. If you're only using 1 pan and not making a multi-layer cake, then just use the recipe as is, and the batter should fit in those bigger pans.
      The baking time may be a bit longer, but I'd suggest using the same baking temperature as in the video, and starting to check at the 30 min mark, and if it's not yet done keep checking every 5 minutes. Hope this helps! :)

      Hi Annalyn. If cake flour is not available, measure 2.5 cups of all purpose flour into a bowl, then remove 5 tbsp. Then add in 5 tbsp of cornstarch. Sift this together. And it will act similar to 2.5 cups of cake flour. Hope this helps! :)

      As for your question: yes, I think you can use pink food coloring instead of red to make a "pink velvet cake". But I'd suggest also leaving out the 2 tbsp cocoa powder from the batter, as the pink color might be too light to hide the brown color of chocolate. So it will just be a vanilla flavored cake that has a pink color. Hope this helps! :)

      Hi Shalee - sa tingin ko ay pwedeng isteam din ito. Steaming ay mas mabilis kaysa sa pagbe-bake. 15 to 20 minuto lamang ang luto sa steaming sa halip na 30 minuto kung baking sa oven. Gayundin, ang steaming ay mas nakakatuyo ng cake kaya kailangan mong magdagdag ng vegetable oil para moist at hindi tuyo ang cake. Dahil hindi ko pa talaga nasubukan ang paraang steaming, hindi ko pa sigurado kung gaano eksaktong vegetable oil ang kailangang idagdag. Pero pwede mong subukan na magdagdag ng 3/4 cup sa 1 cup canola oil sa halip na 1/2 cup na nakalagay sa recipe. Hope this helps! 😊

Just a little bit of flour (or cornstarch) in the frosting makes it a little stiffer and smoother, and helps it hold (not melt) at room temperature. But don’t add too much, otherwise the texture will become too grainy. Generally, it is not safe to eat raw flour or cornstarch etc. But with this very small amount (2 tbsp) it should be safe. And it's optional - so if you prefer not to put it in, you can leave it out, and the frosting should still work. Hope this helps! 😊

      Hi Ruvejane. Yes, you can add coffee if you'd like. You can add 1/2 a cup of coffee to this recipe, and it will add another layer of flavor to your cake. The red food coloring is strong and you will not notice a change in color.

    Hi there, thanks for the recipe. How long should I bake for 6 inch and 8 inch cake pans?. Can i use same ingredients measurement. Same as the ube overload cake?. Thank you

      Pei Chiu Hi Pei, thanks for your question! For 6-inch pans, I’d say check with a toothpick around 18 min, and if still not done, put it back in oven and keep checking every 5 min. For 8-inch pan, I’d start checking around 24 min. You can use same ingredient measurements for 8-inch, but you might have to spread between 3 pans for the 6-inch. Hope this helps! 😊

      The raw all-purpose flour in the frosting is to thicken it and make it more stable. Just a little bit of flour (or cornstarch) in the frosting makes it a little stiffer and smoother, and helps it hold (not melt) at room temperature. But don’t add too much, otherwise the texture will become too grainy. Generally, it is not safe to eat raw flour or cornstarch etc. But with this very small amount (2 tbsp) it should be safe. And it's optional - so if you prefer not to put it in, you can leave it out, and the frosting should still work. Hope this helps! 😊

    Hi! I already tried your recipe for black forest cake and it went well, super moist like I said. Now I'd like to try this new recipe and I'm wondering if I can use All Purpose flour instead of cake flour or make it half CF and half APF. Is that okay? Will it still be as moist as the original recipe? Thank you in advanced! :)

      Hi Resyel. I'm happy to hear your Black Forest Cake turned out well.
      If cake flour is not available, you can substitute with all purpose flour and cornstarch: for every 1 cup of cake flour needed, add 1 cup of AP flour, subtract 2 tbsp, then add 2 tbsp of cornstarch, and sift this together. This will act similar to cake flour.
      Cake flour has a lower protein content compared to AP flour - it creates a more tender texture, finer crumbs, and better rise, which are ideal for red velvet cakes like this. And substituting with AP flour + cornstarch combo imitates that. Hope this helps! :)

      Hi Akai - if buttermilk is not available, for each cup of buttermilk needed, you can use 1 tablespoon of white vinegar or lemon juice plus enough regular milk to measure 1 cup. Stir, then let stand for 5 minutes. You can also use 1 cup of plain yogurt or 1-3/4 teaspoons cream of tartar plus 1 cup regular milk. Hope this helps!

      Hi Hazel, I don’t think the batter will fit in one 10” pan. I’d recommend using two 9” pans like in the recipe. Hope this helps! 😊
