Wet Ingredients:
8 egg yolks (egg whites will be used for meringue mixture) [160 g]
1/2 cup canola oil [120 mL] - amzn.to/4d2qI46
3/4 cup water [180 mL]
1 tsp finely grated lemon zest [2 g]
1 tsp finely grated orange zest [2 g]
1 tsp vanilla extract [5 mL] - amzn.to/3HflEvn
Meringue:
8 egg whites [240 g]
1 teaspoon cream of tartar [3.4 g] - amzn.to/3KD4utj
3/4 cup white sugar [150 g] - amzn.to/48VsDFh
Frosting:
8 oz cream cheese (cold) [226 g] - amzn.to/4bM503i
2 cups heavy cream (cold) [474 mL]
1/2 cup sugar [100 g] - amzn.to/48VsDFh
2 teaspoon vanilla extract [10 mL] - amzn.to/3HflEvn
1 tsp finely grated lemon zest [2 g]
1 tsp finely grated orange zest [2 g]
Mango Puree / Topping / Filling:
5 fresh ripe mangoes, (can substitute with about 5 cups frozen mangoes) [800 g]
1/4 + 1/4 cup sugar [50 g + 50 g] - amzn.to/3HflEvn
1 tablespoon cornstarch [7.5 g] - amzn.to/3TUP2hX
2/3 cup water [158 mL]
1 maraschino cherry (optional for decoration)
NOTE: The acetate sheet should be cut about 30" long, not 12" long as it says in video. Sorry about that!
Alternative Buttercream Frosting Recipe (Swiss Meringue Buttercream Frosting):
This is more stable, and will hold at room temperature in the summer or in warmer climates, like the Philippines! Use this frosting recipe if heavy cream / thick cream is not available.
Ingredients:
5 egg whites [150 g]
1.5 cups sugar [300 g] - amzn.to/3HflEvn
1 lb unsalted butter [454 g]
2 tsp vanilla extract [10 mL] - amzn.to/3HflEvn
1 tsp finely grated lemon zest [2 g]
1 tsp finely grated orange zest [2 g]
Procedure:
- Whisk together 5 egg whites and 1.5 cups of sugar in a glass or stainless steel bowl.
- Then heat in a low heat water bath while continuing to whisk, till the sugar is dissolved (when it feels sticky to touch, and you hardly feel the grains of sugar anymore).
- Take it off water bath. And using an electric mixer, beat this mixture until it is glossy and stiff peaks form. Let it cool down to room temperature.
- When it is back to room temperature, continue beating and slowly add 1 lb of room temperature (unsalted) butter a little at a time (I slice them into 1 or 2 tablespoon size cubes).
- When the butter is fully mixed in, add 2 tsp of vanilla extract, 1 tsp lemon zest, and 1 tsp orange zest, and mix until smooth.
- Continue to assemble cake like in the video.

I made this yesterday and it was delicious. My family loved it. I didn't have the cake ring and the acetate. So I just traced round 9 inch round pan on the chiffon. I also used the springform pan and it worked. Thanks for the awesome recipe

Thank you for another delicious recipe Kurt! A great tip for keeping the cake from sliding around whilst you’re constructing it is to smear some frosting onto the cake stand then place the cake base directly on top so the frosting acts as a glue to keep it in place. I found this very helpful for beginners like myself :)

I'm not good with words but you make me incredibly happy because my friends love all the cakes (ube cheesecake, ube overload cake, ube mousse cake and mango supreme) that I baked. Hi Kurt! I love the recipe! I made it for a baby shower but i wasn’t able to bring it because the frosting slid on the side the next day. But that’s my fault. I tried stabilizing it with gelatine and iced the sides then added mango puree to achieve a drip effect but it made the frosting runny. Thanks for the recipe!

i did try making this cake and it was perfect and it was actually better than red ribbon so from now on id rather make my own mango cake now lol and i actually used caned delmonte mango and it works perfectly. thankyou for sharing this recipe! i really appriciate it..

Totiana Scott Hi Totiana! For a smaller cake, I’d recommend using 6 inch round cake pans, and literally dividing all the wet and dry ingredients by 2. That should make a batter that fits well into a 6-inch round pan. Hope this helps! 😊
CookingwithKurt Thank you so much for responding and your help. It came out wonderfully. The only things I had a problem with was I felt that the lemon/orange zest overpowered a bit. (I may have put too much) I also baked the cake a little too long and it wasn’t as spongey as yours looked lol. I’m not sure if it was the pan that I used that cooked it too long or if 23 minutes was just too long of a time for my oven. I am so glad I tried it though and now know how to adjust moving forward. Thanks again!😊😊😊
Totiana Scott Hi Totiana! I’m glad the cake turned out well!! 😄❤️ yeah, you can definitely add less orange/lemon zest or leave them out completely if it overpowers the cake. Hopefully a shorter baking time will help also. Take care!

Hi Kurt it’s me again 😀! I baked this yesterday and it was a success 😀😀😀. I did not have the round metal ring so I just have to improvised and I made it . It tasted great. I substituted the mangoes with frozen ones. Oh I’m really loving all your baking😍. I just have one problem now , me, my husband & sons & friends are gaining weight due to your yummy cakes as I keep on baking 😂😂😂. Thanks you so much . Next will be Red Velvet Cake. And the other Ube Cake😀. Indeed thank you for inspiring me. I really wanted to see you in person someday God’s permitting!🙏😘🥰.
