A few tips (with love): Whole Foods has silken tofu (the TJs one you’re using is like a medium firm). Blending flour can make it gummy. I’d blend the tofu and add it with the rest of the wet to the dry for the fluffiest texture. Loving the protein vids!! 💜
Tip: liquids are still best measured in a measuring cup, unless theyre water. ml on a scale essentially reads like grams and assumes any liquid will have the same density as water, so more viscous liquids, like milks, may not read as reliably.
Yes the ml setting is useless IMO, it's just accurate for water. Better ti Stick with grams with everything liquido or not and it Will Always be accurate no matter the density.
I was typing up something like this and then saw you mentioned it already. If its water, then 1g = 1mL, so you can do it by weight. In this case I think it was only off by a few grams here and there per 100mL so not a big deal. Figuring out the weight is helpful though if you want to track things like protein because its so much more accurate than using volume measurement, more so for solid things than liquids.
Or if you have a proper european reicipie the will give you the liquids in gramm. So you can online one scale for All of it. And there are a few scales that can keep a few kg so you can put the Blender right on it and Do not have to clean a Transfer medium

Here's how I make mine (yields 2 servings): - 100 g flour - 40 g vanilla protein powder (I use VEGA) - 1 tbsp baking powder - 1/2 tsp salt - 2 tbsp maple syrup - 1 cup of water You absolutely do not need the vinegar, these pancakes are SUPER fluffy just like this. I like to add chocolate chips to mine and top them with warm strawberries (simply microwave frozen strawberries). It's one of my favorite breakfasts ever! So so SOOOOOO good!
Yes to buttermilk and letting the batter sit for at least 10 minutes, especially if you are doing gluten free. Or use yogurt instead of buttermilk, that also gives the extra kick. The custardy texture looks interesting, will have to try them to see if I like it.

Merle, if you want to make it more proteic you could mix one scoop of protein powder with some plant milk until you reach the consistency you wish for, and spread this cream on top of the pancakes. It's so good :)

I’m addicted to high protein pancakes! But in my version I just use the protein powder, as tofu is a bit pricey where I live, and I never had any issues! dunno what happened there tho
@@MerleONeal maybe it's an interaction with the milk perhaps? I never use milk because plant based milks where i live are expensive (three cheers for the third world! yay) so the water + oil + pea protein powder already produces the milky texture i'm seeking.
Correct me if I’m wrong but she probably doesn’t ask for “buttermilk” because there’s no baking soda in the recipe so while it probably will add flavor it won’t help it rise more because this recipe is using baking powder. Buttermilk and baking powder will not have the same rising effect as buttermilk and baking soda.
You should never replace more than 1/3 of the flour with protein powder if you don’t want to mess with the consistency, sticking to this rule has been crucial for me :)
btw if you wanna bump up the protein in something like pancakes, you could always make a sauce/topping by mixing protein powder with plant milk and keeping it on the thicker side. I’ve done it before and it’s super yummy if you have a good protein powder

I've never had pancakes made with tofu, however I do think that the gumminess you got from her recipe is from the gluten being overworked in the blender. Speaking from experience, overmixed batter leads to that gummy texture (even from hand mixed). If you don't like the gumminess *and* want to stick with the blended method, maybe try a gluten free flour mix instead!
I think the first batch fell apart because there was not enough gluten. Eggs are what keep traditional pancakes together. For vegan pancakes the gluten does that and by replacing some of the flour with protein powder the gluten content went down
I wonder if your higher-protein pancakes would hold together if you used bread flour instead of all-purpose flour? Maybe after you added the protein powder, the pancakes didn't have enough gluten to hold their shape?
As much as it pains me to correct you... you don't have the best vegan pancake recipe. You have THE BEST pancake recipe, PERIOD! It's the only recipe we use for pancakes. ❤
We make like a protein powder w soy/oat milk to make a cream to put on our oatmeal...and that made me think to mix w peanut butter for a topping...JK you just said that
protein powder pancakes are so annoying lol, the batter needs to be thick and you have to cook them really low and slow. different protein powders cook differently so it takes a lot of testing to find the right way to make them with the protein powder you have unless you can find a recipe someone made and posted with that specific powder already. tofu pancakes seem so much easier so i'll try this recipe!
Humans can only absorb 30-40 grams of protein per setting depending on your body weight. The remainder we pee out. I notice you like to overload the protein in a lot of recipes, it's really not needed unless your like 250 pound power lifter. Food for thought. hehe

I was noticing the tofu too. Silken tofu also had a lot less tofu flavor than other kinds which helps it work with sweet recipes for me

It's best to use the shelf stable silken tofu. It doesn't have that tofu flavor. I make so many things from this tofu. Even dessert.

Yes, metric is so good... BUT, F > C, at least for weather -- 1-100 covers most temperatures (and 50 is pretty mid).

Make it dairy free does a fluffy protein pancake recipe which are amaaaazing, using protein powder not tofu. Highly recommend to try them.
Definitely skipping adding the protein powder to the pancakes and then just drink a protein shake with them. That way it doesn't muck up the recipe.
