@@Koji-888no, the outer skin is very fibrous and tough to break down. Not peeling it will still get you a perfectly tasty hummus, it just won’t be as smooth. What this video doesn’t tell you is the same as the OP, it takes freaking forever to peel them. If he told you, it wouldn’t be that enticing of a recipe. Do it under water by rubbing the chicken peas with your fingers/palms. The skins will float to the top while the chickpeas will sink. I find it to be a worthwhile step IMO.
Ive killed 2 blenders and 1 food processor attempting to blend those boiled, soft chickpeas without any liquid. Yes, please do. As a South African, I just recently learned about adding cold water for the creaminess. And I also do garlic and falafel spice (which I get from Dubai). I omit the tahini paste, though, as it's not readily available where I am. But I have seen people substitute peanut butter 🤷♀️ I'm not about to float that boat.

In Jordan and palestine we don't put garlic in hummus. I don't think it needs it. It's yummy as it is. Just lemon juice, tahini, salt, and some ice. Olive oil on the top with a sprinkle of summaq and that's it. But I might try it with garlic next time I make it

The baking soda is to reduce flatulence. Works for any kind of bean cooking from dry. Same process he added after but does not matter you can add the baking soda dilute in the water then add the beans soak overnight. The baking soda will penetrate the beans and will help break down the beans even before you eat them shortening the cooking time of the beans as well.
@@MK1lYe. I’m Lebanese, and whenever I make hummus, the garlic and ice aren’t really necessary. The ice can be added, but isn’t required. Garlic I feel just makes the taste stronger.
I have never added water to mine, need to try this ice method. I do add tahini that I mixed with crushed garlic and lemon to it- then if I want it thinner, add a little sour cream. I make it look exactly as his but before adding olive oil, I sprinkle with ground paprika. Yum

I make my own humus bi tahini but I never add olive oil on top unless it's going to be eaten that day. If I add the oil the hummus will not last well maybe just 1 day. The olive oil makes it go off. My step-father was Lebanese here in Australia 💖. Thank you for your recipe 👌

Even if the way you describe it, made by soaking and cooking chickpeas is superior in taste, it is quite a hassle if you want to make large quantities of hummus or too often. I prefer using chickpea flour instead. Just mix it with cold water with a ratio of no less than 1:3, make a watery mix, then cook it until it starts bubbling and thickening. You have to stir it continuously to make sure the bottom does not burn and to make sure that it is homogeneous and you do not have lumps inside (essentially it's like cooking starch). Then let it cool and add your lemon, garlic, salt, cumin and Tahini... It's pretty quick and less cumbersome. No peeling or blending needed.
I appreciate the fact that you're representing for the traditional recipe, but personally when my dad makes hummus his method is different and it still comes out great. A common theme in your videos is that you're showing your own style of making things, so if you were implying with that first part that any other way of making hummus is not correct, I think that's a lil disingenuous, and frankly a lil hypocritical. I cooked at a top Middle Eastern restaurant in Portland. This is pretty much how we made it, I assume the ice cubes are just a cool down the cuisenart? A little cumin, roasted garlic, and finishing with olive oil, put it over the top. We would run the machine for 10 minutes, then pass it through siv . Silky smooth.👌🏼👌🏼
There are a lot of ways to make hummus. My family adds plain yoghurt and garlic. You can even put grilled meat on top. Regardless, hummus is very delicious and tastes the best with fresh warm bread.

You can keep it in the fridge for a few days and then just add olive oil when you serve it. that’s why you make a well in the hummus

This is when you use extra virgin olive oil. Never heat it to cook with. Always regular olive oil for cooking.
I cooked at a top Middle Eastern restaurant in Portland. This is pretty much how we made it, I assume the ice cubes are just a cool down the cuisenart? A little cumin, roasted garlic, and finishing with olive oil, put it over the top. We would run the machine for 10 minutes, then pass it through siv . Silky smooth.👌🏼👌🏼

There are a lot of ways to make hummus. My family adds plain yoghurt and garlic. You can even put grilled meat on top. Regardless, hummus is very delicious and tastes the best with fresh warm bread.
