Mine went up to 495 degrees f and I let it heat up for 2 hours before baking my pide. *use a thin cutting board wrapped in aluminum foil dusted with corn meal to help transfer your pide from the countertop to the oven. Another option would be to build your pide over a sheet of parchment paper and transfer the pide to the oven with the parchment paper (though this may result in less browning on the bottom crust)
turkish food are legit hidden gem. When i was in highschool, we had a local store here owned by a turkish. They sold turkish food. It lasted up until i was in college. Unfortunately, they had to go back to turkey :(. My school was located near the city where their shop is and eveytime i went home, i always stop by their shop. And this one (all cheese) was of the the food they sell. They also had turkish shawarma. My fav was kiymali rulo, they made the smaller version to sell it for a cheaper price. I always ordered 2boxes ahahaha. This is nice, brought back good food memories.
Where I live we have a surprisingly huge amount of Turkish foods! Though I can't eat them the original way because I am intolerant to onions and garlic.... But I have made a lot of Turkish foods with my own twist and they still turned out so well!!!! Nom nom nom
A few years ago I was in Turkey and I had dinner around 11 pm or 12 am and it was one of the best foods I ever had. I think it was Iskender kebab bites. Every time something about Turkey comes up I always talk about it. Great country and people too 👌👌
Same for me. I was once in Turkey for three days and afterwards I had gained 4 pounds. I had the opportunity to see some European countries and visit a lot of good restaurants, but food in Turkey was the best. The second best food in Bavaria. But I have never been in Asia - I consider Turkey as Europe

This looks amazing, just a professional tip, don’t mix salt with your yeast, salt actually doesn’t help yeast grow. Next time just add sugar to the water with the yeast and keep the salt with the rest of the dry ingredients.

While I'm sure you're a pro, that's actually not true. The amount of salt that it would take to hinder the yeast at all is significantly greater than this.

The words pizza and pide come from the same Farsi word "pita", meaning flatbread. Probably both pide and pizza where both invented in the same period. They are really similar. However italians did a way better marketing of their version. Also mass migration of italians to the states helped making pizza popular in the world. Similar to pizza you can have pide with different toppings. Unlike pizza you can have pide in different shapes, boat shaped, oval, round, calzone-ish etc. I enjoy having both pide and pizza. They are both delicious.
I used to work at a pizzeria run by a turkish couple and the husband would makeshift these for me with the pizza ingredients! It was sosososo good and he only called it a "bateau" (boat). Thank you so much for sharing this i will 100% make it, gonna bring back memories.

Made a different version of these 4 nights ago! Google is definitely telling TH-cam what I've been up to, showin me this so soon 🙄.... but for real, these things are better than pizza! We made vegetarian ones with eggplant, tomatoes, fresh mint, garlic, feta cheese. It's a modified ATK recipe. Phenomenal!

You can also add an egg on top of the ground beef one, I recommend it. Mix the egg before you dump it on though, then bake it normally. You can also add cheese. My favourite pide is definitely mushrooms and cheese pide. I also recommend trying that if you like mushrooms.

As a Turk, i LOVE pizza, but pide is just… at another level. Just like pizza, pide can have a lot of different styles. Most common one is called “kuşkaş” (short for “kuşbaşılı kaşarlı”) which is made with kashar cheese (which is a Turkish cheese type, we call it “kaşar” here) and meat that has been cut into tiny dices
Discovered these in a village near somewhere called "crystal bridge" in Turkey late July 1988, stopped at a roadside cafe and tried them. I loved them then and still do. Thanks for the recipe, I'll give these a go

There's a Ukrainian/Georgian version we've been enjoying where the dough is a bit thicker, so it becomes more bread like. An egg gets cracked on top a couple of minutes before you finish baking to leave a runny yolk, which you then stir into the cheese with some butter when it's served.
Looks amazing, but also looks like way too much trouble. I would definitely make it if I didn’t have to make my own dough. I just don’t have the patience for that.
I’d say that the difference is probably the fact that in the case of turkish pide, there are different ingredients added such as pieces of beef, peppers and eggs but not a lot of cheese or sausage.
As a turkish guy your pide is approved to be authentic. You even had turkish salca. One thing i can reccomed is crack an egg on top of the ground beef one i usually order one with egg and one without extra cheese is also an option you gone for just cheese which is delish too.

You can also add an egg on top of the ground beef one, I recommend it. Mix the egg before you dump it on though, then bake it normally. You can also add cheese. My favourite pide is definitely mushrooms and cheese pide. I also recommend trying that if you like mushrooms.

As a Turk, i LOVE pizza, but pide is just… at another level. Just like pizza, pide can have a lot of different styles. Most common one is called “kuşkaş” (short for “kuşbaşılı kaşarlı”) which is made with kashar cheese (which is a Turkish cheese type, we call it “kaşar” here) and meat that has been cut into tiny dices

Discovered these in a village near somewhere called "crystal bridge" in Turkey late July 1988, stopped at a roadside cafe and tried them. I loved them then and still do. Thanks for the recipe, I'll give these a go

There's a Ukrainian/Georgian version we've been enjoying where the dough is a bit thicker, so it becomes more bread like. An egg gets cracked on top a couple of minutes before you finish baking to leave a runny yolk, which you then stir into the cheese with some butter when it's served.
It’s called khachapuri and it’s a Georgian dish. Ukraine has nothing to do with it.
We sometimes crack an egg on our pides too

I’d say that the difference is probably the fact that in the case of turkish pide, there are different ingredients added such as pieces of beef, peppers and eggs but not a lot of cheese or sausage.
Yeah, I don't like the comparison and I don't think either is better than the other, because both taste soooo good!

As a turkish guy your pide is approved to be authentic. You even had turkish salca. One thing i can reccomed is crack an egg on top of the ground beef one i usually order one with egg and one without extra cheese is also an option you gone for just cheese which is delish too.
