Wow super Amma You cooked as we did in Kerala side The only difference is that we add Sambhar onion 3 or 4 when we grind coconut Also my mother's advice while cooking vegetable in aviyal don't slow the flame and add required amount of water in starting itself If we cooked in slow flame vegetables vadi poyidumnu sollurvanga
We make on similar lines as you said.. Unga method we too follow at our house. As senakizhangu is allergy for me we do not use. We add white poosanika. Few add curd in aviyal and few do not add curd in aviyal. In coconut oil vwe fry karuvepilai and kadugu in the end

Aviyal is incomplete without yam (chenai kizhangu).. also we grind a small portion of coconut, chilli jeera and shallots(which is missing) to paste .... Also, we add little sour buttermilk to the veggies before adding coconut.... அவியல் தளதள என்று இருக்க வேண்டும்...

The Kerala Nair version has onion and garlic and they add the coconut/garlic/chilli mix at the top but do not mix it but steam it for 2-3 minutes before switching off.. Brahmin version has neither onions or garlic but always add some thayir at the end (fresh curd is needed and added at the last but don't cook with curd as the existing heat is enough. I think it ensures that aviyal does not become sour)..
@@rajutvs In many parts of Kerala it is cooked in different styles...need not be a Brahmin version to avoid garlic and onions. Mostly brinjal is not used. Curd is added while grinding coconut...turmeric powder is a little more enhanced. In some places vegetables are confined to 2 or 3.... in some places..spinach stumms, potatoes, red pumpkins are also added.... some make it juicy ...while some cook the same way our expert did. I think after cooking if raw coconut oil is added with fresh curry leaves that add to it's ultimate fragrance...hopefully that is the grave secret of Kerala style avail. In Hindu religious functions and festivals it used to avoid garlic and onions as a special consideration as a matter of routine ethnic preferences.
