Indore is Namkeen capital of India. Lot of branded Indian snack manufacturing units r here and r exported across the world. Haldirams is one such brand. Indoris also have Marathi flavour to it. What u saw was Elephant footYam cut into cubes just like Paneer - he fried it and added dry masala to it. Yams r very healthy Vegitables.
Haldiram is basically from Old Delhi's Chandni Chowk. They've become so big brand name that have branches in all over India. Indore's big brands are Aakash, Talati, Pushp, Panchal (spices), etc.

I'm from Indore and this isn't even 80% of what Sarafa and 56 is. Sarafa is the night food street it opens around 10:00 P.M and closes at 4:00 AM. The nightlife of Indore is a moment to live for especially for foodies, be it street food or cosy cafe or lavish restaurants or bars you can experience everything.
Its food capital of India ❣️❣️and cleanest city of india really great city yaar, me wha gya tha really ek bhi kachra nhi dikha

Over all INDIA me INDORE ki HINDI 100 % pure hai aur respect bhi aap ko INDORE ki HINDI me dekhne milti hai. Chhote bachche ko bhi tu ke bajay AAP bola jata hai. Khane ke liye, Khane ki veriety ke liye INDORE aage hai. Milk se bani alag alag tarah ki mithai, sweet bhi INDORE me jyada dekhne milti hai. Veriety jyada dekhne milti hai.
56 Dukaan is a eating centre patronised during daytime and evening, and Sarafa market eating market during the night.
At 56 Dukaan you cannot cover more than 4 shops in a day, because each shop has so many food items, each unique, each tasty and mouth watering.
Indore not only cleanest but weather bhi bahut badhiya hai...banglore delhi chennai pune me bhid hi bhid bachi ab...they look like grave yard now
It's garadu.. specially found and eaten in area nearby Indore or in malwa region..it's a root vegetable or called yam. It is deep fried and sprinkled with special garadu masala or jeeravan and has been eaten in winters
Indore Sarafa food stalls start at around 9 pm, and close at around 4 am. Daily.

I have done 2 years of my schooling in Indore and we use to visit 56 Dukaan every week....earlier there were two different shops with same name Johnny Hot Dog and one served chicken/mutton shaami kebab burger which was called hot dog.
Garardu is Jimikand or Yam in english and it is very similar to Kachalu but more firm and grainy....wat i missed in the video was Indore k Moongbardey or Mangordey...which are small moong dal pakoras (like moong dal ladoos but very small and very crisp).

Wo gulabjamun nehi "Kaalojam" hai. Kalo ya Kala matlab Black. Hindi me Kala to Bangla me usiko Kalo bola jata hai. Actually Bengali language me "a" aur "o" ka bahut jada use hota hai.
They are called Kala Jamun, Jalebi is served with Rabadi not curd, he tossed the Dahi Wada to assure customer the thickness of the curd, if the curd have low density it would drop down ... 👍
Garadu is a root called purple yam. It is a favourite food item, eaten specially in winters. It produces heat in body, apart from other nutrients.

Pehle wo 56 shop area mei thaa, baad wala food market sarraafa mei hai, jab raat mei jewellery shop band ho jaati hain to raat bhar yeh food market ban jaata hai, navratra ke samay to bahut bheed rehti hai.

A couple of years back I visited Indore along with my family. We were there for 4 nights. Out of those 4 nights 2 of them were dedicated to Sarafa Bazar. You cannot try all the flavors in one night....
Joshi dahivade ke yaha mera experience mast raha jab mai mere family ke sath dahivade khne gaya tab vaha bahut bheed thi meri family me sabka khake hua sirf mai hi rehe gaya kunki customers bhi bahut they fir maine ek idea lagaya our thoda jor se bola bakwas hai ye dahivada nahi khana hai tab joshi ji ne suna fir kya unhone muze pyar se bulaya our dahivade khilaya.

Wow I'm from Indore and it's best city if you want to eat variety, now I'm feeling to eat this all 😭, and people if Indore are sooooo lovely.
Those black gulam jamun are called kala jamun, there is some dryfruit stuffing inside and they are fried till they coloured black, normal gulab jamun crust is soft and kala jamun crust is hard, if you visit sarafa you will see big kadai full of gulab jamun everywhere, boiling milk, malpua, and flat chana chat everywhere
