Hello! My maternal grandparents were from Belfast. They came to America in the early 1900's. Granddad used to show me pictures of Belfast. He took a trip back in the 70's. Beautiful city.

This is basically my cheddar bay biscuit dupe from "RL". Just add in a cup of cheddar, and brush with butter heated with garlic and voila. But, really, any biscuit is delicious!

I might also add a bit of chopped parsley too, to the biscuits or the butter you brush on, either way.

Chilling the flour in the freezer for a few min can help the butter granulation if you're working it in by hand or are in a particularly warm setting.

Wow this recipe is so very similar to what in my country we would call coconut drops. It is made with a little more sugar and dried fruits like raisins as well as grated coconuts. Some ppl would also add ground cinimon and vanilla extract. It's a really nice snack for anytime of the day. It can even be had for breakfast. Lol

How long can the batter last in the fridge? For example, if I want to make the night before, but not bake until the next day. Could I do that?😊

What you could do is put them on a baking sheet with the parchment like he did and put them straight in the freezer. Keep in mind baking from frozen takes longer. I have been making biscuits 50 years and have never put the dough in the fridge and then formed and baked the next day.
Could I use olive oil instead of butter? I'm outta butter momentarily...

Yeah we call that making scones, not the brick hard hockey pucks that Americans think are scones but the light and fluffy scones that are closer to American biscuits than anything else, and don't let any POM tell you any different.

That looks like a bread you know like a cheese Scone that doesn't look like a biscuit I'm from New Zealand and we call cookies biscuits which are crunchy they come in all sorts of textures but that looks like a bread
