Listen. I’ve lived in Chicago all my life. I don’t know if other American cities are as giardiniera- directed as we are, but I as long as I can remember I’ve been on a spiritual journey for the most crunchy, delicious giardiniera I can find. I see now that it was within me all the time to create this miracle. Thank you Brad, in all seriousness. I’ll never have to buy giardiniera from the store again, and when the apocalypse happens, I’ll be running this city

I grew up in a west coast Italian family that had year round gardens, home made jarred vegetable antipasto and giardiniera were staples in the pantry and fridge. My Nonna added a little tomato sauce to her brine at times and it is wonderful. The antipasto had a chunk of tuna added to the top of the jar. We have a healthy long lived family. Love this vid! I looove Brad’s episodes so much!!!. I’d like to make a couple of points. 1) adding vinegar kills off the probiotics that lacto-fermentation creates. Probiotics are the good bacteria for better gut health. 2) if you want a more vinegary flavor, simply ferment for a longer period. That being said, food is food. So if your priority is a particular flavor profile and adding vinegar gives you that and you’re not concerned with the probiotics then add the vinegar. With cooking and food, it’s all up to you, you make the choices, that’s what’s fun about it.
@@rloz2694 vinegar and lacto-fermentation are both ways of preserving food. I can keep lacto fermented foods in the fridge just as long as vinegar preserved foods. Just about any food can spoil though, as long as it smells good, looks good and tastes right, you should be fine.
It’s really easy to build an airlock by attaching a tube to the lid and running it down into water. As gas build it will escape through the water, but nothing should go back in. Makes it easy to have 1 water jar with multiple fermentations going.

You mean the glass container broke or the water exploded? It's very rare to have tap water get super heated, but it can happen, microwaves just aren't the safest way to boil water.
