And old doesn't always mean dirty, especially in continuously running stalls like these. @Sophie Love - that is not a rusty knife. It is a long-lasting cast iron blade in its natural dark colour. You lot seem to have no clue that these vendors don't exist to provide dirt-cheap novelty street-food to exchange-rate westerners. They exist to provide fast food to low-income working class Indians who pay in rupees. The only way they can keep it affordable for the latter, and a viable livelihood option for themselves, is by keeping maintenance & aesthetics costs and recurring overheads to the bare minimum.
