RECIPE: EXTRA Crispy Mushroom Sandwiches with Jalapeno-Garlic Sauce
INGREDIENTS shown in video.
1 Lions Mane Mushroom (the size of an apple)
12-14 Crimini Mushrooms aka {Baby Portobello mushrooms}
1 Hand size, Chicken of the Woods mushroom
2 tomatoes, sliced.
1 red onion, wafer thin sliced.
1 Jalapeno, fresh, sliced.
Squishy soft buns
Wet | Dry | Wet | Dry Batter Coating
DRY
6 cups Whole meal flour
1 cup Corn Flour/Starch
1 TBS Baking powder
2 TBS Garlic Granulated
2 TBS Onion Granulated
1 TBS Cumin
1 TBS Coriander, ground
1 TBS smoked Paprika.
1 TBS Salt, kosher/crystal
1 TBS Black pepper
WET:
4 Cups Soy or Oat MILK
3 TBS Apple cider vinegar
Extras:
1 Jar, pickle sliced lengthwise - for juice to marinate and fro frying pickles as an extra bonus round. Same method as the sandwiches.
1 Jar Pickled Jalapenos with juice - to marinate in before battering.
Wicked Kitchen Rotisserie Chicken Seasoning (Available in the U.K. at Tesco) for dusting after frying - optional.
DIRECTIONS
Quick Boil Mushrooms in medium sauce pot in enough water that they submerge.
Bring water to boil, add mushrooms, boil 3-5 minutes, remove, allow to cool and drip dry in rack until cool enough to handle and press the remaining water out.
Save the mushroom liquid to reuse or water your plants with. We will be reusing ours in a teriyaki glaze in an upcoming video.
JALAPENO GARLIC CASHEW DRESSING:
½ Cup Jalapenos pickled with juice.
1 Cup Cashews, raw
3 Garlic, cloves
Add to Bowl and cover boiling water, soak for 30 -60 minutes.
Strain liquid, add soaked cashews to High speed blender. Add Jalapenos and juice. Add Plant based milk just enough to cover Cashews. Blend until smooth and store in refrigerator for up to a week.

Just an FYI to anyone considering harvesting Chicken of the Woods in the US - there's a toxic mushroom called Jack O Lantern that is sometimes mistaken for COW - it won't kill you, but it will make you throw up about 15 times in a night. I know this because I had a friend who happily collected and fed them to a group of about 15 people. In the middle of the meal, another friend who had wisely refused to eat them ran in and yelled for everyone to stop because she had taken the mushrooms into a dark room and they glowed in the dark (thus Jack O Lantern) - another tell is that Jack O Lantern has gills underneath and COW does not. It was a bad scene to say the least. Lol...
A good reference book is definitely useful in identification. A good way to tell the difference is COW has pores where as the Jack O’ Lantern has gills.

Tried this recipe with using Crimini (Baby Portobello) and Lion's Mane. Thanks for sharing. Boiling the mushrooms really made a difference. Putting the onions in the refrigerator was truly a game changer. The sauce was delicious. Really cute dogs.

Yes!!! I haven’t tried the Chicken of the woods, but the Lion Manes is TERRIFIC. It definitely has the meaty/stringy texture of a chicken breast. Amazing!

Wow, wow, and WOW. This recipe was amazing! I used large Portabella caps for my sandwich. Excellent idea to marinate the mushrooms in pickle juice, it made them so tasty! I'm excited to use my leftover boil-broth for a bowl of ramen, too.
I'm not exaggerating when I say, these fried sandwiches turned out better than any other animal meat fried sandwich I've tried to make at home... EVER. I even did fried pickles, you can't go wrong with those!
Probably my favorite part about this recipe is that because there's no raw meat there is no reaching certain temperatures to worry about (also no fussing about cross contamination with raw meat juices, haha!). All I had to focus on when frying, was the color of the breading. Usually I have a lot of trouble balancing the two (burnt batter, yuck). The flavor on the batter was so tasty as well, cumin is a wonderful idea!
I WILL make these again, using this recipe!

New to your channel and HOOKED!!!!!! If I was doing a plant based cooking show, this is what I would want/dream for it to be. I think you make everyone want to be better in the kitchen. Eating vegan has only been a challenge as the restaurant business has been so lax in jumping in, with the exception of a few "junk food vegan" companies. You take it to a new level, of course. I guess I've grown tired of restaurants that offer so little for us, tired of leaving things off or the Impossible Burger which is such an easy way out, not that I'm not glad for it but there is so much more that can be done and you are doing it. I used your wet,dry,wet dry method on oyster mushrooms. Customized my flavors and used white pepper, salt, and Derek Sarno's Blazing Beast Seasoning. OMG delicious! Better than restaurant. Thank you so much!

My dad started my love of foraging when I was a very young girl. Paper grocery bags full of morels in the spring! I’ve expanded my knowledge and I’ve been lucky enough to forage lions mane, hedgehogs, lobster, black trumpet, oyster, golden chanterelles, giant puffball, and shaggy manes. Foraging for herbs , ramps, and fiddleheads makes for a good day. Have mushroom knife will travel.

Did not realise that you were living in Blighty. Got one of the Lions Mane kits (Urban Farm IT) and had one really nice 'flush'. Working on a second attempt. Got a big mixed punnet of exotic mushrooms from CostCo today so I think mushroom burgers could feature on the menu later this week.

I know what you mean about fried pickles. There used to be an American style chilli restaurant in Bristol that did them, only place I’ve ever seen them. Sadly closed now but was open long enough for me to get hooked on the pickles.

Made the lions mane version tonight. The breading was AMAZING but the mushrooms were soggy (boiled for 4 mins) and totally void of flavor. Could I salt the water they were boiled in? Not sure if that would help. Any advice?

I know it wouldn't be similar to the fast food ones, but I think the kuon's maybe would be great in a cornmeal double dip. i haven't seen vegan buttermilk but that would be great for the wet part. You did a good job on the fried pickles. I grew up by the drive in that invented them, next to the pickle factory (where I worked my 16th summer.)

Man, after having watched like 5 videos, THIS is the selling point for me. It just clicks right. As an arborist im in contact with lots of Mushrooms, as a Burger fan i like the part of just slamming the oversized piece of mushroom on into the bun because thats how you do it! Amazing... and i really like how clean you work and the presentation of the food, its so nice! Gonna try it when i find a chicken of the woods, they should be popping soon where i live :D kind regards

I’m sure oyster will work well. I’ve seen other creators use them fried for sandwiches as a substitute for KFC etc.
You know, we don't yet, will have to work on that.. It would be the same process as long as they are the cluster oyster mushrooms, not the King Oyster. Hope that helps.

They have the seal for the kiss lash i have found that applying that when you finish and then again are 24 hours helps them last longer.

Great video! I like the fact that you included more readily available mushrooms also. Would the sear and press technique (like you do in previous Lion's Mane videos) work here also? Let them cool and then batter and fry?
Thanks and great question. Will be trying to use more of the easy to find mushrooms and mix it up a bit. We've done the press and pan fry here th-cam.com/video/2oN_YB6wXsE/w-d-xo.html. like a chicken fried steak. Have not deep fried. My theory with the press and sear is that it gets a lot of the water out and creates a denser texture similar to Steak. This boiling plumps them up. Two different results, both will work well, all depends what you're going for.
